IF it was an ipod touch AND you set up find my ipod BEFORE it was stolen AND it is on AND it is connected to wi-fi AND it has not been restored, THEN you may be able to find an approximate street address.
Otherwise, there is no way to track it or disable it.

What kind of iPod are you getting to replace it? If it is an iPod Touch, and you are in the US, after you set up the Touch you can use the iCloud beta and download your previous music, books and app purchases directly to your Touch.

They can, but the images will only be the small thumbnail files that are created for optimized viewing on the iPod's smaller display. That is unless you store the images on the iPod in their full resolution.

The SN will only help identify the iPod as yours IF it is recovered.

Sorry, but the Classic has no internet capabilities, so there is no way to wipe it. And without Find My iPhone (which requires Wifi or cellular, there is really nothing that you can do to trace it either).
Your only option would be to report it to the police...
