hello , i want to add a rescue emile to my apple id and i can't , i cant either call them because i'm in SA and they don't have a number to call here so please help me .

You can't add a rescue email address without being able to answer 2 of your security questions, you will need to contact Apple to get them reset.
As South Africa isn't on this page : http://support.apple.com/kb/HT5699 , then you can try contacting them via this link, saying that you don't have a rescue email address and that you are in South Africa (which isn't on the HT5699 page) and see what they reply with : https://ssl.apple.com/emea/support/itunes/contact.html
When they've been reset you can then use the steps half-way down this page to add a rescue email address for potential future use : http://support.apple.com/kb/HT5312

If you do then log into your account on http://appleid.apple.com, select the Password And Security section of your account's page, answer the two questions that show and you can then add a rescue email address : http://support.apple.com/kb/HT5620

iTunes, iCloud, Messages and FaceTime are all seperate services. You could change your ID for Messages without affecting anything else. If you wish to change your ID for iCloud, you would need to save your data, please let us know if you wish to use another ID for more than messages.

The only way I know of is to copy the entire content of your chat window (while it is still active) and then paste it into a text document (or, if it is short enough to fit the window without scrolling, take a screenshot). Once you terminate the chat, the record is gone (as far as I know).
