I use a setup of one mac controlling 2 other macs for audio purpose. This means that I have one mac with a Cinema display connected and the 2 other macs without any monitor connected.
Have can I decide the desktop size of the 2 connected macs without any monitor.
For now I have a very small window and I need some more space.

If you open RDC, before you connect to the Windows 7 PC, select RDC > Preferences > Display to make changes to the window size.

If this question is about TextEdit, I don't think you can do it in TextEdit, after pasting the image. TextEdit is meant to be a basic text editing program.
You will have to open the image file in an image editing application. You can use Preview for doing this, or something more fancy. If it's Preview, just open the image file. From the menu bar, under Tools, select Adjust Size. Make the image the desired size. Then, select (outline) the portion of the image you want in the Preview document window. Copy it, and paste it into the TextEdit document window.

How can I change brush size?

I really have two questions.
1. How can I change the size of the brush tool? It's all greyed out on every project I start, stuck at the very smallest size (0.10). I'm trying to trace over a photo at the moment, and it's taking FOREVER with the tiny little brush. It only un-greys itself after I draw a line, but I can only change the size of the line I've just drawn. As soon as I go to draw a new line, it goes straight back to size 0.10. It's incredibly frustrating!

2. How do you make the eyedropper tool put your chosen colour into the pencil colour box as opposed to the brush box? Every time I use it, it forces me to use the brush. Which, because of the above problem, is ridiculously inconvenient to draw with in just about every situation.

Sync with iTunes so you have a backup. Tap Settings > General > Reset > Erase all content and settings. Restore the unit as New. Reconfigure for your new ID and password. Restore your apps, etc. from backup.

Always keep the original artwork, so make changes to a copy. In this case you should keep them in separate documents.
If you wish to have the size(s) changed so that everything has the same dimensions in the other unit, you may use the conversion factors, 1 inch = 72 points, 1 mm = 1/25.4 inch, etc.
So if you wish to have the same dimensions in mm as you had in points, to do it with full(est possible) accuracy you need to select everything, then with Scale Strokes and Effects ticked in the Transform palette flyout:
1) Add *72 in the W field and press Ctrl/CmdEnter (to have the same dimensions in inches);
2) Add /25.4 in the W field and press Ctrl/CmdEnter (to have the same dimensions in mm).
Remember to untick Scale Strokes and Effects if unneeded afterwards.
You can check the dimensions of the original and converted artwork against each other when you have them in the corresponding File>Document Setup>Units.

If you want to print it on your own printer, you can change the papersize and scale in the Print settings.
