How can I change my apple ID on my iPhone? It's tied to a dead email address that's inaccessible. I can log in on my computer with updated id, however I can't find where to change old email. The settings displays new id. When I try to update or buy an app on my phone it automatically puts in the dead email address and asks for the password.

Sync with iTunes so you have a backup. Tap Settings > General > Reset > Erase all content and settings. Restore the unit as New. Reconfigure for your new ID and password. Restore your apps, etc. from backup.

I know, I know, go to settings > store > log out etc. etc. etc.
But here's the deal:
My itunes on my computer > correct apple ID
Setting on phone > correct apple ID
I have synced my phone, I have turned on/off my phone, I have read every "how can I change my applie ID on my iphone" article on the internet and STILL the app store will NOT update, so all my apps have updated that I can not access.
Please help, I'm loosing my mind! ; )

If you are asking how to change the iCloud ID on your device, your go to Settings>iCloud, tap Delete Account, then sign back in with the new ID. This deletes the account and your iCloud data from your device, but not from iCloud. Provided you are signing back into the same account, your iCloud data will reappear on your device when you sign back in.
To avoid losing photo stream photos, save them to your camera roll (if not already there) before deleting the account. To do this, open your my photo stream album, tap Edit, tap the photos, tap Share, then tap Save to Camera Roll.

Today I had the screen of the old 4s fixed. Now I want to clear all contents and installation so that I can sell it.
Problem is, that it keeps asking me to verify my Apple ID with my old e-mail address, which obviously doesn't work.
I've allready changed the Apple ID e-mail address in the Apple-ID area in settings. But this doesn't help.

No, doing a reset will not make you lose data. Only restoring erases the content.
There is a separate setting for iCloud in Settings/iCloud/ ->Account-> iCloud account info, but since this is grayed out, the info should change after the reset.

Please help - I am going insane!!! I have an apple id on both my mac and icloud (and laptop), but a different one on my phone. The phone won't allow me to change to the new one, and the old one won't let me access app store/icloud either as I have forgotten the password. I tried following the advice on here of going to Settings>Itunes and App Store and using the new one but it just says that that id is already in use. So, when I try to log in with the old one it won't let me (because I don't have the password), but won't let me change it to the new one because it already exists! HELP!!!

But there is no "logout" function? Both boxes - Apple ID and Password are empty, but it won't let me enter either of the ones I have/have had. I have asked for your email address to be edited out. Posting your address in an open thread is a sure way to be bombarded by unwanted email, remember it will be here long after you have resolved your problem, for automated detection software to find.

You don't have to do anything with the first iPod that you don't use anymore. If you are planning on keeping it, put in a drawer in your house and forget about it.
You don't need a second account to use with the new iPod. I use one Appl e ID and iTunes library for two iPods, and two iPad. I have different content on all four devices. You can select exactly what you want to sync to each device and it can be different content on all devices.

If you simply just changed the email associated with that appleid you can just delete and Re-download the apps.
You can verify the above step by going to the App Store on device > Updates>Purchased - if you see the app there just delete it from the home screen and redownload from the purchased section
Now if you got rid of that account entirely, you will have to delete and re-purchase on your new account
