My AppleID is a Gmail address. I'm going to China and I'm told that Gmail may not work there. So I'd like to change my Apple ID.

Having 2 makes things harder

If these apps were obtained with your old ID, you'll have to use that ID to update them. All apps are forever tied to the ID used to obtain them, & can only be updated using that ID.

How can i change my AppleID (mail address) in iCloud?

I've changed my email address. It was quite simple to change this for my AppleID, but my iCloud-account is still registered on my former address.
It keeps asking for my password in a pop-up, but obviously I don't have the right password. (It for sure is not the same as the Apple ID password!).
I tried to change the iCloud login in 'options' in my iPhone, but the accountaddress stays grey and unclickable.
Does anyone know how I can change my mailaddress and password in iCloud>

On an iOS device...
Go to Settings>icloud, scroll to bottom of screen and tap Delete Account. Then log in using a different ID.

My iPhone and iCloud are no longer syncing after the IOS 7 update, and I think its because my iCloud AppleID was automatically set up with icloud in the name, different from my previous ID which had mac in the name. But I cannot find a way to quickly change this.

If you mean that Find My Phone is asking for a password to a different Apple ID to your current Apple ID.
This feature has been introduced to make stolen phones useless to those that have stolen them.
However it can also arise when the user has changed their Apple ID details with Apple and not made the same changes to their iCloud account/Find My Phone on their device before upgrading to iOS 7, or if you restore from a previous back up made before you changed your details.
The only solution is to change your Apple ID back to its previous state with Apple at My Apple ID using your current password, you don’t need access to this address if it’s previously been used with your Apple ID, once you have saved these details enter the password as requested on your device and then turn off "find my phone" and delete the account from your device.
You should then change your Apple ID back to its current state, save it once again and then log back in using your current Apple ID. Finally, turn "find my phone" back on once again.

How can I change the AppleID in iMessage on my MacBook?

I just downloaded the iMessage app for my MacBook and it seems to work great. Only issue is: I have 2 Apple IDs and, of course, the wrong one is now logged in. I would like to know if there is a way to change the Apple ID associated with my iMessage account on my Mac. So, basically sign out with one and sign back in with the other.
The - sign at the bottom to delete the account is greyed out and when I go to add a new account, iMessage is not an option. When I go to add a new email address where it says "You can be reached for messages at:" and type my other Apple ID, it says that it's in use as an Apple ID for another account.
Any help is appreciated.

Actually, I figured it out, nevermind.

As far as I can tell you cannot delete the ID when Only one is listed.
This would suggest that you have to add the second (Correct) one and then delete the first (wrong) one.
I can't say I have tried this yet.

How can I change the AppleID that is associated with the 'APP Store' app on my IPhone 4S. I have changed the AppleID in via settings > 'iTunes & App Stores'. Whenever I try to download an App on my IPhone it defaults to my old AppleID. This seems to be preventing me from syncing my IPhone apps with ITunes on my computer.

Thanks. I had done this but was not able to sync my apps with itunes. I discovered that each downloaded app is associated with the apple ID that is active at the time of the download. Since my Iphone had apps that were associated with different appleIDs the sync did not seem to work. I solved my problem by deleting all of the downloaded APPs from my iphone and then syncing them using my current AppleID. Fortunately there weren't too many Apps and they were all free. I don't know how this might work if I had paid for the APPs.

If I am understanding you correctly, it sounds like your daughter may have set up an alias account under iCloud. Your AppleID email address may or may not be the same as you iCloud email address, depending on how it was set up. What versions did you have? Did you purchase the iApps with your Apple ID as some previous time?
Go into the System/iCloud preference pane and sign out. Then sign back in with your Apple ID. Also sign in to the App Store with your Apple ID. If you have purchased those apps previously you'll be able to download them for free from the Purchases section.

You do not mention it, but I will assume you are running OS 10.9.1.
Go to: Apple menu / System Preferences / Users & Groups. Click the padlock and enter your password.
Click the + (plus sign) and set up a new account for your wife. You have to enter a bunch of info. And then create the correct Login Options. Automatic login does not require a password from the selected user.
When that is done, verify the account works by restarting the computer and login as your wife.
Make sure that any applications in your own Users folder that will be needed are moved to the Applications folder in your wife's Users folder.
Now go back to Users and Groups, click the padlock and authenticate, select your own account, and hit the - (minus sign). This step cannot be reversed, so you might want to wait a few days before doing it.
When your wife is logged in, the App Store will know.

You would have to change it back to your old email address in order to turn off "Find My iPhone" on your devices. After you changed it back to your old address and deactivated "Find My iPhone" (activation lock) you could change your Apple ID to your new address again. Now it should wok on all your devices.

I have rejoined the iPhone community, not with one iPhone but with two. My wife agreed to move from the unenlightened!
I have set up both under my apple account and want to keep it that way. But I do not want iMessages going to both phones. I would like separate message queues but share all apps and other purches from the store.
I have created a separate AppleID for her but under Settings>Message>Receive At (it currently says 2 addresses) > ... will not allow me to change the current eMail address and when I add hers (her appleid) it errors out. The only thing I can do in the Apple ID field is to manage my account and not change it to hers.
How can I have 2 iPhones (and my iPad) on the same account but have separate identies?
