The only way is to remove the account, then add it back in, using the AppleID you want to use. If this is a wholly different AppleID, then you will create a new iCloud account. If you just changed the email address at the appleid web management page, then it will be the same iCloud account.

All app purchases are permanently tied to their Apple ID. You will have to delete and repurchase the apps with a new ID. I would recommend wiping that iPad and setting it up with another ID.

An Apple ID isn't necessarily "linked" with your email other than for recovery reasons. So, as long as you know the Apple ID password, an old email isn't catastrophic. Apple ID != e-mail.
Now, if it's really bugging you and you really want to change it, if you log in to http://appleid.apple.com and change your primary email address, this should update your Apple ID. There will be a couple hoops involved with this (i.e. verification of email change by sending email to rescue/alternate email. Alternate email can't be the same as the new primary. The new primary can't have ever been used as/with an Apple ID. etc...).

It's a really bad idea to post your email address - it's an invitation to spam - and I've asked the Hosts to remove it. (I realise it may be an example, not the real thing, but to be on the safe side I reported it. Your point is clear without it.)
You can't change your ID to your iCloud email address. What you can do is to change your ID to a non-Apple email address at http://appleid.apple.com - certainly your ID needs to take the form of an email address, the old non-address IDs aren't acceptable for some facilities.

Sync with iTunes so you have a backup. Tap Settings > General > Reset > Erase all content and settings. Restore the unit as New. Reconfigure for your new ID and password. Restore your apps, etc. from backup.

Apps and Music are not from iCloud. Are from iTunes and App Store.
You can change this from: Settings>iTunes and App Stores>Sign out and sign in with new ID, but you will have to pay again to download apps that you already have in your old account. Or leave it as it is to share purchases with your son.
