I have downloaded the new Lion version and it comes with this really ugly ical leather theme...I want to change it back or just change it to something else....I have 6 different calendars since I am operating a salon and the new colours aren't as bright and nice and the font is all ugly.....HELP!

You don't have to do anything with the first iPod that you don't use anymore. If you are planning on keeping it, put in a drawer in your house and forget about it.
You don't need a second account to use with the new iPod. I use one Appl e ID and iTunes library for two iPods, and two iPad. I have different content on all four devices. You can select exactly what you want to sync to each device and it can be different content on all devices.

No, they will all follow the default setting. If you want them all to fetch, for example every 15 minutes, then set it to 15 minutes in Fetch. I only mentioned the other if you wanted to leave one for manual. I have an account on my phone that is a POP account that I get mail at home from. I let my home computer get this mail, but when I am out of town, I pick it up with the iPhone. That one is set to manual.

For the PDF vs ePub - No, that's the way PDFs work (think of them as graphics, not text), wheres ePubs are Web Pages - so no you can't them to behave exactly alike without converting the files.

You can turn that feature off in Settings>Mail, contacts, calendars>Contacts>Show in App Switcher>Recents>Off.
