How can I delete my apple ID and/or iCloud from a device I no longer have?

I sold an iPhone to a guy but my apple ID is still logged in.  He cannot transfer his contacts to the phone.  He said I have to call the carrier.  I don't see why he cannnot go into settings on the phone, click iCloud and delete account.  He says he cannot do this.  I called Apple, they said I could go to iCloud.com and sign in and delete my account from that device, but I can't figure out how to do that.  Any ideas?

    If you don't want ANY one at Apple knowing your email address you could try this:
    Go to http://myinfo.apple.com/ and where your email address is listed just replace it with a made-up one like "[email protected]"

    You can't merge accounts or copy content to a different account, so anything that you bought or downloaded via the old account is tied to that account - so any updates that those apps get you will only be able to download via that account. You can change which account is logged in on the iPad via Settings > Store

    Here's the "Help" I got from Apple. They even quoted my question back to me then proceeded to answer with something very different and completely missing the point.
    I understand that you would like to delete the Apps. I know how eager you are to get the required information and I will be happy to assist you.
    You can remove individual songs, audiobooks, and videos from your iPod, iPhone, or iPad. Removing an item from your device doesn't delete it from your iTunes library.
    To remove items from a device other than an iPod shuffle, first make sure that iTunes is set up to manually manage items.
    1. Connect your iPod, iPhone, or iPad to your computer.
    2. When the iPod, iPhone, or iPad icon appears in iTunes, select it.
    3. Unless your device is an iPod shuffle, click the Summary tab and make sure "Manually manage music and videos" or "Manually manage music" is selected.
    4. If the disclosure triangle to the left of your iPod, iPhone, or iPad (below Devices) is closed, click the triangle so that you can see the device's contents.
    5. Select the item you want to delete and press the Delete key.
    This was not helpful in any way and I am still unable to delete apps on my devices in a global, iTunes based way. Each device still requires its own independent process.

    Match was off.  I made all of the changes and then went through the "Turn on iTunes Match" option.  I now have deleted some tracks, edited the Metadata in CDDA, and then added it back.  This worked fine, but it is not a good solution.
    I just tried making some edits and use the "Update iTunes Match" and that seemed to work.  It looks like the real answer is that Match must be up and operational, then you can make changes and run the Update to incorporate the changes.  However, if Match has a problem then Signing Out and back in to your store account and going through the process of Turning On Match (were you get the questions, "Add this Computer to Match" will overwrite any changes. 
    Since this relies on the stability of iTunes, I won't be making a lot of changes between updates.

    I wholeheartedly agree. It seems rather pedestrian given that *supposedly* lesser sites/brands allow 'opting out gracefully' at any time - most with the ability to scrub everything clean and start again.
    It's annoying enough that Apple fail to contribute much practical help here, but to obfuscate the fact it's also impossible to leave is rather unbecoming to say the least - just see the number of questions on account deletion etc.
    So in short then: spending 1000s of $£¥€ or whatever on the 'best tech' on the planet and still no ability to do a basic account closure (or even a trace of Blu-Ray support even)...
    Nevermind. Clearly Apple feel that life in "The Village" is just so great that who in their right mind would want to go.
    Now repeat after me: "YOU ARE NOT A PERSON - YOU ARE NUMBER SIX!!"

    Settings > iTunes and App Store > Apple ID = Sign Out... Then Sign In using the preferred Apple ID.
    It should be Noted that anything Downloaded with a Particular Apple ID is tied to that Apple ID and Cannot be Merged or Transferred to a Different Apple ID.

    Why would you want to delete an Apple ID? Purchases you make from iTunes and/or the App store are locked to the Apple ID the purchase is made with. You would be unable to access your content.

    The content (music, videos, apps, games, etc) that is aquired with an Apple ID is forever tied to that ID. Apple does not transfer the content of one Apple ID to another ID and Apple does not merge Apple IDs. Unless you wish to abandon all of the content associated with an Apple ID and buy it again with another Apple ID, you should maintain the ID in order to redownload or update the content in the future.
    It is not a good idea to make numerious Apple IDs for this very reason.
