I don't need a password. I'm the only user and my Mac is allways protected in my home.
Neither I want a password to change System Preference.
How can I do?

Although your profile says you're running iOS 5.1.1 it sounds like you're running iOS 7 (otherwise you would not need your password to delete the old account). Assuming that's true, and your iCloud ID has changed but you need to delete the old account in order to change to your new one, go to https//appleid.apple.com, click Manage my Apple ID and sign in with your current iCloud ID. Tap edit next to the primary email account, tap Edit, change it back to your old email address and save the change. Then edit the name of the account to change it back to your old email address. You can now use your current password to turn off Find My iPhone on your device, even though it prompts you for the password for your old account ID. Then go to Settings>iCloud, tap Delete Account and choose Delete from My iDevice when prompted (your iCloud data will still be in iCloud). Next, go back to https//appleid.apple.com and change your primary email address and iCloud ID name back to the way it was. I set-up my iCloud with a hotmail account which is no longer active. How can I delete it?! I do NOT know the password any more and I've written several times to request it with no help from Microsoft. I NEED to restore my 4S but CAN'T without turning OFF the "Find My iPhone" service- blah! I am required to enter the password and have tried EVERY password I've ever used!

If you can't remember the security questions or the pass code (if you have set up 2 step verification), then your options are your rescue address or in some circumstances a call to Apple, but unless they are able to provide Apple some evidence the account is theirs (which is far from the case so far) Apple won't do anything.

I'm not sure you realise where this is going. It should be able to be used, even if the OP has forgotten the password to that account as well as their password to the Apple ID and all the security questions which are questions about them, there is no reason they shouldn't be able to reset their hotmail address receive the reset mail from Apple and unlock their account.

You need to go to Manage your Apple ID, https://appleid.apple.com/cgi-bin/WebObjects/MyAppleId.woa/, and sign in with your current Apple ID and password and do the following:
1.     Edit your current Apple ID and change it back to the ID which is displaying for your iCloud account. You do not need to verify it - this is only a temporary change
2.     Go into Settings>iCloud on your device and delete the iCloud account. Use your current password when your are prompted for a password
3.     Once the old iCloud account is deleted, go back into Manage your Apple ID and change your ID back to the current one
4.     Go back to Settings>iCloud and sign on with your current ID and password
That should take care of your issue!

Tap and hold an app until they all start jiggling and an X appears in the icon's top left corner. One by one tap the X to delete the app. when they are all gone you are free to buy them again with your own account.
