How can I edit a PDF without converting it to word or excel?

1. Drag the PDF file onto the icon for Preview to open it. Drag the cursor over the text to select it, hit Command-C to copy it, open any document you like in the application of your choice, and Command-V to paste the text into that document. You can't edit the text in the PDF document itself this way, but you can copy the whole text, paste it into a new docuemnt in any other application, edit it to suit your needs, and save it as a new PDF file from the Print dialog box.
2. GraphicConverter can open a PDF file, allow you to modify its graphic contents, and save the revised file as a new PDF.

    I've checked your account, and couldn't see what version of Acrobat that you have. You may be referring to the Acrobat DC which Adobe announced this week, but that isn't available just yet.
    So, for the time being, you'll need to use Acrobat Pro XI or earlier to edit PDF files. You can download a 30-day trial from http://www.adobe.com/products/acrobat.html.

    Word processor like "editing" is not tolerated by PDF (the file format/technology discussed and described by the ISO Standard for PDF, ISO 32000-1).  Minor touchups are tolerated. The textual characters have to be renderable text (a scanner's output image of text is a picture of text not "real" text).
    Open the PDF with Acrobat XI.

    Which version of Acrobat do you have? If Reader, then you can't edit a PDF at all, and you can only copy it if it was enabled by the creator of the document.

    It is always best to edit the source document - MS Word, for example - then create a new PDF. If the source document is not available, you can try saving the PDF as a Word document. Sometimes that works reasonably well, other times not so much. It is possible to make small edits using the Content Editing tools in Acrobat, but do not expect too much. Acrobat is not a word processor.

    Illy just sees a bunch of pixels as do the rest of us.
    You may use Image/Live Trace with suitable settings, expand, and let her work with the resulting vector artwork.
    Or you may draw a (set of path(s) round the part(s) you want to keep (turning htem into a compound path in case of multiple paths, then select everything and Object>Clipping Mask>Make. That will only hide the outlying parts (unless you do the destructive deed), and you only have limited ways of (further) editing.
    Or you may work in Photoshop or similar.

    You would need the full version of Acrobat to edit a PDF. If you have the original file & the program that created it, you could make your changes & then create a new PDF. However, you can copy the text from a PDF in Preview or Acrobat Reader. I believe I've seen a program that can convert a PDF to a Word document, but I haven't used it. You could check MacUpdate or VersionTracker.

    Adobe products are not meant for editing. It is better to edit before PDF creation. Adobe Acrobat will provide more editing tools.
