It has always been very basic to always maintain a backup copy of your computer for this very occasion.

Based on your post it sounds like you would like to sync your iBooks content with your computer. I have located an article that may help you in this situation. While you can sync this data with your computer you can also use the sharing button to send PDFs using various sources:

Unless you did a backup of the phone prior to the restore, you don't. Remember that restoring to a particular date and time will restore the device to that particular date/time, so anything after that point is deleted.

As sberman noted, it would be much better if you transferred everything from your old computer. This will import yoru iTunes library and everything (playlists, artwork, etc.)
To copy playlists from yoru iPhone...
Select the iPhone on the left sidebar in iTunes. (If you cannot see the left sidebar, menu View > Show sidebar)
Click the triangle to the left of the iPhone name to view the contents of the iPhone.
Right click on a playlist name then Export...
To import this playlist into iTunes, menu File > Libraty > Import playlist and select the file you saved.

Is your new phone another iPhone?
If so, just sync them via iTunes from the contact manager you were syncing your old iPhone to.

It might take a bit longer, but it's risk free:
Use your iMac to send your contacts in an email to yourself
Open them using your iphone.
They should arrive as vcf format and you click to open it and hey presto!
Also works the other way round, so when I receive an email from a new contact, I register it on my iphone and click on "share contact", sending it to me which I then open on my Powerbook.

Computer Crashed. iTunes Library Lost. How can I get it back from my iPhone

I have 522 Purchased songs on my iPhone. My computer recently crashed and we got a new hard drive, so all settings were refreshed on my computer. I plugged in my iPhone to transfer my Purchases back to my iTunes library. Again, 522 Purchased songs, and only 303 of them copied. I tried transferring them again, however it didn't transfer anything. Is there anyway I can get the songs back from my iPhone?
Note: My iPhone is on automatic update, and if I try switching it to manual I'm prompted that in order for the change to occur I must Erase and Sync my iPhone which would completely defeat the purpose of my trying to get my music back on my computer so I can put new songs on my iPhone as well.

iTunes on our computer has at least 2000 songs and I previously went through it and made a playlist of about 700 of songs that I like, so everytime I wanted to add the songs that I like onto another device I would not have to go through 2000 songs again. With my iPhone 4, I was able to watch videos on the exercise machines at my gym that were equipped with 30-pin connectors. They piped the video to their display screens, and the audio to a jack for my earpods to plug into. Now that I have upgraded to an iPhone 5, there is no way to directly connect to these machines (they don't have the new "Lightning" connectors). So I bought a Lightning-to30-Pin adaptor at my Apple Store, and sadly learned that it doesn't pass through video, only audio. This is a huge step backwards for me. What is a reasonable solution for this?

As an added note, if you are trying to use photo stream, that will only work on newly taken photos. Existing photos when photo stream is turned on will not sync to the stream. Use the connection to your computer as descibed in the link as the way to get photos to your computer.
