You mean for an iPhone 4S? You can't. Yo can only update an iPhone 4S to iOS 8.1.3.
The only iPhone that can currently download iOS 6 is an iPhone 3GS.

I just bought the phone second hand with no sim as a birthday present for my wife with the intention of getting it unlocked (not jailbroken)

Can you plug the phone into a computer? I didn't look when I got my phone to see if it gives you the serial number even before you set it up or not (I know it is there now), but it might be there if you plug it up and then click on the device home. Perhaps you meant, "in which country was my iPhone originally purchased". Here's the answer...go to an Apple store, or AASP, and ask. They have access to a database with that information. Since the information is useful to someone who has a stolen iPhone, you should bring along some sort of documentation that you actually own the iPhone. -
