How can I permanently delete files from my Mac before I give it away?

I would like to get rid of any pictures, term papers, emails, but keep the Adobe Photoshop on there that I downloaded from iTunes. I'm sure someone would enjoy it.

Well, except you have no right to include purchased commercial software with it unless you also delete that software from your other machines and never use it again yourself (and you need to include any original purchased media for the software along with it).  You purchased a license for you to use it, not for you to sell or give it to someone else to also use.
Also, since you bought the software online from Apple, it is permanently tied to your AppleID, so nobody else could ever update it, or re-download it if needed anyway.
As far as getting rid of the machine, the best approach is to completely erase and re-install the base OS you bought it with.  That will erase all your information and data and give the new owner a nice clean slate to start with so they can set it all up as they wish to.

    You cant permanently delete them, but you can hide them.
    Pop into iTunes, and in the iTunes Store under Quick Links along the right hand side, you can see Purchases, and then sign in, look at your books and click on the X in the top left and it will hide them so you dont have to see them.

    Yes you can definitely do this. You'll need an app on the iPad that handles PDF viewing and editing. There are many around - two of the best I've seen are GoodReader and PDF Expert.
    In iTunes when you iPad is connected to your PC, go to the Apps tab and scroll down and you'll see the File Sharing section. You can drag files to there to share them to your iPad.
    You could also look at online file sync services like PDF to ePub Maker if you prefer not to have to connect your iPad to a PC

    Turns out the answer to that question changes if you ask it more than 4 times, so ask it again....
    The answer depends on the type of video files you want to convert.  If they are DRM protected commercial videos, no help can be given here.  Google.

    If you are unable to empty the trash, try holding the Option key while selecting Empty Trash.

    If you are using iCloud, quit the Mail app if it's open.
    Open System Preferences > iCloud
    Deselect Mail then re select it.
    Relaunch the Mail app and try deleting mail.
    If you aren't using iCloud. with the Mail app open, from the menu bar click Mailbox > Rebuild
    Then try deleting mail.

    I deleted from the playlist
    If you delete them from a playlist it only deletes then from that specific playlist.
    Note that Library -> Music is not a playlist. It is the library.
    To remove items from iTunes, delete them from the library or *Shift Delete* from a playlist to remove it from that playlist and the library.
    It will then also ask to delete from the hard drive (which is not the library), if it is in the iTunes media folder shown in iTunes prefs -> Advanced.

    You can control which apps are backed up to the cloud via Settings > iCloud > Storage & Backup > Manage Storage on the device - do those apps show there, and you are able to delete their content from the backup there ?

    I've asked him to delete them but he jokes that he will.... eventually.
    He has an iPhone 4S. I want to permanently delete some photos he has, I dont want him to be able to do some kind of sync or backup & have them again.
    If I deleted them from his iTunes.. his desktop picture folders.. his PC recycle bin AND deleted them off his phone, will he still be able to find them?? Also if he does an update in the future, will they somehow appear again? And how can I know if he has synced them to iCloud/set up iCloud?

    I dont think he has the Shared Photo Stream option on, but I'll check. If he does have it, is it simple to access it?
    Open the Photos app, tap Shared at bottom to see any Shared Photo Streams.
    My Photo Stream is in Albums.

    A Macintosh Classic (http://support.apple.com/kb/sp198) has a SCSI hard drive. Even though the hard drive can be removed and placed in an external SCSI enclosure, it is not going to be easy to find a way of connecting it to a modern Mac. That would normally require a USB-to-SCSI adapter, which may or may not be supported under the latest operating system versions.
    The easiest method of transferring files from a Macintosh Classic may be via an external USB floppy drive connected to the modern Mac. 1.44 MB Mac-formatted floppy disks can be used for such transfers (not 800K).
    A SCSI Zip (100) drive could in principle be connected to the SCSI port of the Macintosh Classic. The Zip disk could then be moved to a USB Zip (100) drive connected to a modern computer.
    The Macintosh Classic does not have built-in Ethernet, nor a slot for an Ethernet card (certain other "classic" Macintosh computers do have the ability to hold an Ethernet card). There are some external solutions (such as SCSI-to-Ethernet adapters), but with limitations. For a networking overview, the http://www.applefool.com/se30/ web page could perhaps be of interest.
    It is also possible to arrange a null-modem connection between a Macintosh Classic and a modern computer, providing that a USB-to-serial adapter is attached to the latter (appropriate terminal emulation programs are needed on both sides).

    Up front, I'd like to say that this question has nothing to do with storage space - rather, it's about deleting apps, for parenting reasons, the iCloud. 
    We wish to permanently remove select apps from our child's iPad.  We cant seem to do this - while they are not active on the home screen, by going into itunes or the App Store, they can simply be downloaded again without our knowledge or consent.
    Are there any provisions for parental controls over the iCloud?

    By going to settings - general - restrictions - parental controls can be setup to limit the age appropriate content including apps. By hiding those apps on your computer you may be able to change their visibility as well, but I haven't had a chance to check it - try it yourself if you want.

    I looked at my disk utility and then used an app to tell me what files are taking up the most space. As I'm looking back there are a whole bunch of files that I uninstalled and deleted. Those files are still listed as taking up space. When I search in spotlight the files aren't listed on the computer at all but are still ''taking up space''. These files were like adobe trials, apps, music, and videos that I no longer wanted on my laptop. I'm still confused as to how they are still listed there. How do I get rid of these files???

    If you've already deleted the files and emptied the Trash they are already, in effect, erased. At least the disk space they occupied is now available.
    To be able to offer help we need more information about which Mac you have, which OS you are running, how much RAM you have installed, how much hard disk space you have available, etc.
    Go to the Apple Menu>About this Mac - copy and paste the contents of the report here (deleting the serial number of your machine). Once we have that info, I'm sure someone will have some suggestions.
