How can I reinstate my 3GS in iTunes after transferring to iPhone 5?

I recently upgraded from 3GS to iP5. I want to use my 3GS as an iPod, and continue syncing to change music. When I transferred data, (Transfer > Restore backup (from 3GS)) my new iP5 took on the name of my 3GS, which I did not want. How can I reinstate my 3GS in iTunes and create a new identity for my iP5 in iTunes5? My goal: to have two discrete iPhones (3GS and iP5) in iTunes with their respective data.
BTW, I haven't backed up my iP5 yet because I thought that might change my prospects of bringing back the 3GS

You don't need to worry about the folders.
Your backup from iphone 5 will be completely seprate and your iphone 3gs backup would be safe as well.
Yes you can sync both phones in itunes and even connect them at the same time to sync.

Help i'm missing a load of artwork after transferring itunes library from old widows laptop to new imac. I have tried getting album artwork from the advanced menu but it hasn't found all of it only 70 album artwork out of 190 is showing!!!!! been trying for three days to transfer and get it all but to no avail Help!!!!!!!!!!

You need to transfer your iTunes library, not just the media.
Copy the entire /Music/iTunes/ folder from your old computer to /Music/ on the new computer.
Inside this folder, rename the iTunes library.itl file to iTunes library.
Launch iTunes.

Was the "Find My iPhone" feature enabled on the device prior to it beling lost? If it was not, the only way to find the device is to physically look for it.
If the feature was enabled, go to www.iCloud.com and search for the device. As long as the device is powered on and connected to a network (wi-fi or cellular) it can be tracked.

You cannot do this.
Iphone can have music from one and only one computer/library.
When you buy music you do not buy the right to distribute that music to others. You only have the right to your own personal use.
It is illegal to give your music to others.

The music industry dos not encrypt cd's. If they did, it would be illegal to break that encryption as well.
Maybe one day the movie/video industry will stop encrypting them, but for now, they do.

You could either remove the iCloud account altogether and have him create his own or go into settings->store-> and switch automatically download Apps off. And go into icloud and turn off photostream. Depends on what you prefer.
