It has always been very basic to always maintain a backup copy. Use your backup copy to put everything back.

What do you mean by "documents"? Word or Pages files, spreadsheet files?
Also, on your device, in Settings>iCloud, you have to have an on/off setting for Docments&Data. If not what kinds of entries do you have on that screen?

That is stealing. Your friend does not have the right to give her music away. Delete them and purchase your own music.

Are you using Photostream? If yes, then you will be able to see your 1000 most recent photos on your Mac in iPhoto.
All your contacts, calendar events, emails, etc. will still be on your Mac as part of iCloud.
If you didn't import your videos from your iPhone to your Mac, then you've lost them unless you can restore your cloud backup to another iOS device.

Have you upgraded your iCloud account to iCloud Drive by upgrading your mobile devices to iOS8? Then you can only access the documents by upgrading the Macs to iCloud drive as well. See this link: iCloud Drive FAQ

I am willing to pay for an app or some other means as long as I'm guranteed it will work? I am not that into computers and technology so I did not have time machine active as I've only really heard about it since trying to locate the file.

Until you have saved a document at least once, it exists only in memory. When your computer died, your file disappeared.
Accept it as a learning experience and a reminder to save your documents immediately on opening them for the first time. That gives your Mac a name for the document and a location to save the file.

How can I restore my library that was erased off external drive....

I just accidently erased 90% of my itunes library that was reading off an external drive. The last 10% was recently purchases music that I downloaded directly to my laptop hard drive and remains intact (makes sense?). Basically I wiped out the external drive that my 90% library read to.
I was able uncover hidden files off my ipod and inturn copy my library back to the external drive but the big question is - is there a way to restore all this without having to start over Itunes? Can I reimport it off the external drive from the ipod copyover? One thing I can't do is copy it back onto the laptop hard drive because there's nowhere near enough space. Thanks for you help!

OK first thing you might want to do is read this post of mine from the other day...

because, well I am too lazy to type much of it again.
But the part that really is for you is about half way down, just above the link where it starts with "If it was me, " which is what you want to do. In your case, you would use the "Add to library..." command twice. Once to add all the files from the external, and then again to grab all the ones off the internal, if you want everything located in one location. You can then remove the ones from your internal AFTER you verify that they made it to the external ok.
As noted in that post at the end, but worth repeating, doing it with that method keeps everything all together (database files, media files, etc) in a single folder for your library rather than your database files on the internal and your media on the external or spread across both drives. If you ever need to move the library or want to use your library on other computers, you can simply move the folder or the entire drive and use the above instructions to open your library.

I saved two documents last week and now I can not open them without "buying the latest version of pages" Is there anyway to save this information without being forced to buy new software. I have been happy with my old pages and saved it with my old pages and not I can not open it with out buying the new version. I feel that apple is holding my document hostage. You probably already have V5 without knowing it. Unless someone else edited your documents with V5, it was you, and you just need to make sure that you are using V5 for edits.
Right-Click the docment in Finder and choose Open With: Pages V5.x
I'd be surprised if you didn't find that option.
