How can i uninstall 7.0 software from my iphone 5

I downloaded the new 7.0 software to my iphone 5 yesterday - HORRIBLE!!!! I would say approx 3/4's of my apps no longer work (free & paid), the keyboard is now a different color - harder to see, as well as the text message background color is once again harder to see. To kill an app on the 7.0 now takes longer than before. All & all I am extremely annoyed with myself for downloading the new software, I want the old back - anyone have any ideas?

SMS text messages are backed up with the iPhone - whether it's locally or to iCloud. If you've already written over the backup that had them (as in, backed up after the delete) then they're gone.
If you still have a backup available from a time where you had the messages on your iPhone, all you have to do is erase the iPhone and restore from that backup.
"Retrieve deleted messages from iPhone" is simple as pie.

The iOS apps such as Stocks can't be deleted. You can move it inside a folder if it bothers you to look at it. Since there's room for >2200 more apps on the home screen, there's no real need to delete it.

Depending upon the specific model you have you can upgrade to either 10.4.x or 10.5.x. Neither are available from Apple any longer, so you will need to look to eBay or Amazon for copies. Be sure to only purchase retail copies and not gray labled machine-specific copies.
If your eMac came with 10.3 originally and has a clock speed of 1 GHz or higher, then you can install Leopard, 10.5.x.
If you don't want to lose data then make backups.

All sorted! dont suppose you know how to fix another problem I have??? for weeks now, since updating to ios5 I think, for some reason every time I have tried to log onto app store it says CANNOT CONNECT TO ITUNES STORE. It's nothing to do with my computer, and I've been to the Geniius bar but they couldnt help and nothing I seem to do lets me update my Apps and even worse, I cant even buy any more. Any suggestions?

If older photos are missing it may be because photo stream photos are only held in iCloud for 30 days. After that they are removed from iCloud but will remain (up to 1000 photos) on your device until deleted. Also, only photos taken after enabling photo stream are added to your photo stream, and only when the camera is closed, your device is connected to wifi and you have at least 20% battery life remaining.
To transfer the missing photos you can either create a shared photo stream containing them and invite yourself to it (see http://help.apple.com/icloud/#mmc0cd7e99), import the photos to your computer and sync them to your iPad, or use an app like PhotoSync to transfer them to your iPad over wifi.
