How can I use my iPod touch to restore my iTunes library?

I recently had to reformat my computer so everything is gone. I have all my music backed up on an external drive, but can't I just download everything off my iPhone and iTouch back into iTunes?

The music sync is one way - copmputer to ipod/iphone.
The ONLY exception is itunes purchases. File>Transfer Purchases
You need to copy everything from your backup copy to your computer.
The iphone/ipod is not a stoarage/backup device.

Before you restore the iPod make sure that your iTunes library has the version of apps that are presently installed on your iPod. Many apps have been update and the update apps are not compatible with the 2G iPod. I would do that by deleting the apps from your iTunes library and then transfer them to your iTunes library. See:

How can I use my iPod Touch as a remote for iTunes, while connected via USB?

I was wondering if I could use my iPod touch as a remote/iTunes extension while it is connected to my computer via usb.
It would be highly practical to control my music from there, since it is charging right by my side while I'm at my computer.
Remote is not really an option, my computer doesn't have bluetooth or any connectivity. Something over wifi would work, but there's a usb connection right there that's begging to be used.

You can't do it via USB. Go to the App store and download/install the Apple Remote app. It can control iTunes on your computer via wifi.

The transfer of non iTMS content is designed by default to be one way from iTunes to iPod. However there is a manual method of accessing the iPod's hard drive and copying songs back to iTunes on Windows posted in this thread: MacMuse - iPod to iTunes
If you prefer something more automated then there are a number of third party utilities that you can use to retrieve the music files and playlists from your iPod, this is just a selection. If your iPod is set to update automatically take care when connecting back to your computer and an empty iTunes. You will get a message that your iPod is linked to a different library and asking if you want to link to this one and replace all your songs etc, press "Cancel". Pressing "Erase and Sync" will irretrievably remove all songs from your iPod. Your iPod should appear in the iTunes source list from where you can change the update setting to manual and use your iPod without the risk of accidentally erasing it. Check the "manually manage music and videos" box in Summary then press the Apply button. Don't uncheck Sync Music it will be unchecked by default when you choose the manual setting: Managing content manually on iPod
Whichever of these retrieval methods you choose, keep your iPod in manual mode until you have reloaded your iTunes and you are happy with your playlists etc then it will be safe to return it auto-sync again. I would also advise that you get yourself an external hard drive and back your stuff up in case you have problems again. External drives are comparatively inexpensive these days and you can get loads of storage for a reasonable outlay.

The suggested advice in this support article http://support.apple.com/kb/HT1478 wasn't a help at all, because the option "enable disc use" in the summary window of itunes doesn't appear. I am runnin' the latest itunes version and the latest ipod touch software, by the way.
Secondly, i have some photos on my ipod touch which a friend of mine copied from his macbook pro. Now i would like to copy them on my computer. itunes doesn't offer any option for this.
Does anyone know how to solve this problem?

No mention of the Touch, it works differently from other iPods and has no "disk mode" as such.
I think it can be used as a storage device by using a 3rd party App, search the the App Store for such items.
Photos transferred to your Touch via iTunes will be of severely compromised quality i.e 640x480 pixel resolution and file size around 600-700 kb. These can be retrieved, again using a 3rd party application on your computer, such as [Touch Copy|http://www.wideanglesoftware.com/touchcopy> but you will not get back original quality images.

If you get it to work I then the 2G iPod has a built-in Voice Memos app but you will need to purchase an microphone since the 1G-3G iPods did not have built-in mics. The mic plugs into the headphone jack.

Why were you trying to email the videos? That's not how you get videos onto your iPod in any case. You sync them through iTunes; get the videos into the iTunes library and then sync them to the iPod just as you do music, apps, etc.

How can I get my iPod Touch 5G recognized in iTunes 11.0.2?

I got the iPod Touch 5 recently and I could not wait to put my favorite music in there so i plugged it to my MacBook Pro and for some reason, it doesn't recognize it on iTunes 11.0.2. But it is only recognized in iPhoto. If someone could please help i would really appreciate it. THANKS!
