Since creating Gmail mailbox on Iphone my data usage has increased dramatically. Is there a away of limiting the size of initial download to phone, then bringing down rest of message/attachment on demand?

There is no such option/setting on an iPhone. Whether you can view the attachment has more to do with your connection, WiFi or cellular, and the size of the attachment or the overall size of all attachments if more than one attachment, than anything else. There will be a paperclip indicating the message includes an attachment regardless if downloaded with the message or not. When connected to the cellular network, if an attachment is below a designated size the attachment will be downloaded automatically. If over a certain size, you must select the attached file icon in the body of the message to download the attachment. The size limit varies by carrier/provider.

It would best to get them in a excel sheet so I can print, review and then make decisions to delete entire names that I know longer communicate with.

Thanks for your response, but copying and pasting creates a link. If the user places a check mark in one of the boxes, all the rest of the boxes will have a check mark also. I will research this some more.

How can I limit the number of emails that are retained on my iPad Air? Because of legal requirements of a long-term project, I cannot permanently delete emails relating to that project from my ISP's mail server. My gmail account contains over 17,000 emails and, upon setting up my new iPad, and updating to ios 7.1.1, I now have all 17,000+ emails taking up space. I would like to limit the emails by count as I was able to do on my old iPad running ios 5.1.1 OR to retain them based on date range. I've changed the bill payer to myself but it stills says on emails that I sent that its from my mother.

In order for the "From" field to show you options on the "from" addresses available, you must set them up in the Preferences > Accounts first.
I can't show you a screen shot of the from field because I currently only have one account, so the from address used is the default. However, when I had more than one, then options will show up in your compose/reply window.

You can't. Why on earth would you attempt to manage 2500 emails with setting up a folder structure or some means of doing so? Simply keeping them in an single inbox is not realistic, no matter what email client you use.
