How can you subset a backup?

I gave my daughter my iPod (32Gb). She bought an AT&T iPhone (8Gb). She had her entire music library on the iPod (22Gb). She wanted to move the content of the iPod to the iPhone but of course she was 14Gb in excess of it's capacity. She wasn't distressed by having to select only some of her music the problem was in order to retain the data in her applications and the folders she had used to order them she had to restore from a backup. But you can't select a subset of a backup! There are other times when this has been an irritation. For example should I wish to move only one application and it's data to another device I know of no way to do it or to retain a folder, the apps in it, and their data i.e. its the same problem.

Since you say you cant see the back up in iTunes you should be able to see it when following the last step where it says for iTunes 10.7 or earlier. Dont worry as this step also works for iTunes 11.

If you don't have a backup then the only possible solution is to go back to the store and see if they can get your old phone and create a backup of that. I know very often that Apple employees will wipe the returned iPhones clean before shipping them back to wherever they ship them.
When you say your old phone was "broken" does this mean it is dead and won't turn on?
Do you have a Time Machine backup of your computer, or a clone that might have this info on it?
Other than that I hate to say you may be out of luck. Time Machine and/or a cloning program performed regularily will inevitably save your a** in situations like this.

How can you transfer photos from phone to phone

If you are trying to get all the photos from an old phone to your new phone, you could sync the old phone which would create a backup containing your Camera Roll. Then connect the new phone and follow the prompts to register and name your new phone. You will then be given the choice of restoring data to your new phone from a backup of the old phone. This will replace any existing data on the new phone with the data from the backup so it's really the best option if the other phone is new.
Another option would be to connect the phone to your computer and import your photos to iPhoto or the My Pictures folder. Then you could sync the other phone and under the Photos tab in iTunes you could choose the folders/albums of pictures you want on the phone. They will not be in the Camera Roll, but they will be on the phone.

You cannot. However, if your back up is through iTunes on your computer and you do an internet search for something like "iPhone BackUpExtractor", I believe there is software that will help you access the SQL database that is your back up. You may be able to pull out what you need.
Once you restore from a back up, any data that was on the phone is gone.

The data isn't actually stored in iTunes. iTunes is like a card catalog that allows you to access information from the various places that it's stored on the computer. SMS and contact info will be viewable in whatever program you sync contact information. The backup actually keeps the files, but doesn't make them viewable, I'm pretty sure. You can only see the info you've actually synced.
