How do I access ICloud on my 4S when it has an old email address for my apple ID?

I've somehow lost my phone contacts and calendar information. I'm trying to access ICloud hoping to retrieve the lost data. But when I try to access ICloud it asks for a password that is associated with an old Apple ID email address.

If you mean that Find My Phone is asking for a password to a different Apple ID to your current Apple ID.
This feature has been introduced to make stolen phones useless to those that have stolen them.
However it can also arise when the user has changed their Apple ID details with Apple and not made the same changes to their iCloud account/Find My Phone on their device before upgrading to iOS 7, or if you restore from a previous back up made before you changed your details.
The only solution is to change your Apple ID back to its previous state with Apple at My Apple ID using your current password, you don’t need access to this address if it’s previously been used with your Apple ID, once you have saved these details enter the password as requested on your device and then turn off "find my phone" and delete the account from your device.
You should then change your Apple ID back to its current state, save it once again and then log back in using your current Apple ID. Finally, turn "find my phone" back on once again.

How do I create a new icloud email address for my apple id? My original email address is associated with my previous employers.
When I send email from my Macbook, it seems as if I still work there, which is a problem.
I would like to use the email address that I created for my iPad.
When I login with my appleid (for my macbook) I keep getting the old company one, not the new one.
Is there any way of resolving this? I

I also wonder what the best way is to set up accounts for children in a family. Is there any good. clear, simple explanation from Apple Support about these issues? Or best to go to Apple store and go to genius bar or one to one advise?

You can set up an iCloud account which makes the iCloud email address you choose the Apple ID and thus the login for it:

though I have to say I think it's more sensible if the ID is another address, both for security reasons (so people don't know what the login is) and as a contact address from Apple if the account were to stop working and they needed to contact you. So personally I would to to System Preferences, enter the GMail address which is an ID, and then choose a nerw @icloud.com address.
If she has her own iCloud account she will need either her own computer or her own user account on your Mac to be able to make use of it. You should note that under Apple's terms of use Apple IDs are only available to children of 13 and over.
As to purchasing apps, this is nothing to do with iCloud: it's iTunes, and the login can be different. So you can all sign into the same iTunes account but have different iCloud accounts. Or she can have her own iTunes account if she is of suitable age (credit card needed for purchasing apps).
If you have other children you should be aware that any one Mac or device can create only three iCloud accounts - this is tied to the serial number, not the user account, and once reached cannot be bypassed. You can of course sign into an iCloud account created on another device.

If you change your email, you do not need to "change" your AppleID. Just edit your email(s) on your Apple ID by logging in to your AppleID account. You should always use the same AppleID for Apple Services (iCloud, iTunes etc) and multiple ID will cause problems and confusion in the future.

Then change your Apple ID back to the old ID, then delete the account. Once done, change your ID to your new one.

i CLoud shows how to change the PW but not the UID. MY MAC Mini shows everyday that there is a problem, but yet the cloud seems to play my music fine.

If the old ID is yours, and if it is an earlier version of your current ID, go to https://appleid.apple.com, click Manage my Apple ID and sign in with your current iCloud ID. Click edit next to the primary email account, change it back to your old email address and save the change. Then edit the name of the account to change it back to your old email address. You can now use your current password to turn off Find My iDevice, even though it prompts you for the password for your old account ID. Then save any photo stream photos that you wish to keep to your camera roll. When finished go to Settings>iCloud, tap Delete Account and choose Delete from My iDevice when prompted (your iCloud data will still be in iCloud). OK...now I appear to 'progressed' I changed my email address back to original on Apple id and then was able to delete icloud account. Apparently I couldnt do it as it kept requesting password when I entered passsword ( both old and new one, it wouldnt accept it as it had my old email address in ) It didnt do that on ios6 . Anyway I deleted account, but now I tried to login in with my new id/password and it says unable as already in use!!! More help needed please! Its a nightmare!!

Whenever you create a new icloud email it is an Apple ID, but if you previously had an Apple ID you cannot use the new email to replace the old one. You have to abandon the old accout and you will lose all the content you had with that account. But what I did was upload all my itunes to amazon cloud, these were the only purchases I had. I already bought books from kindle and I now rent movies from amazon instant video. Everytime I log in I use my icloud email and password. I just used it to sign in to support communities.
The notification that you posted about changing your Apple ID was present when I created my icloud email and made the change.

It may take a short while to remove the account.
You should then change your Apple ID back to its current state, save it once again and then log back in using your current Apple ID. Finally, turn "find my phone" back on once again.

You should still be able to log into an old email account, even if you haven't used it for some time, very few providers delete email accounts.
