I had 2 accounts under Mobile.Me and am having trouble getting the calendars to sync now between the devices. How do I accomplish this?

With iCloud, each family member would need to have their own iCloud account with their own ID in order to have an iCloud email account. (It's created when you set up the account and turn on Mail syncing.)

It sounds like you would like to associate your iPhone to your iTunes Store account. This article should help you do that:
iTunes Store: Associating a device or computer to your Apple ID

Open iTunes.
Sign in to your Apple ID by choosing Store > Sign In from the iTunes menu.
Choose Store > View My Account from the iTunes menu.
From the Account Information screen, click Manage Devices.
Next to each device or computer name, you will be able to see when each device or computer was associated with your Apple ID. You will also be able to track how many days remain before your associated devices or computers can be associated with a different Apple ID.
Note: If no devices have been associated with the Apple ID, then the Manage Devices section will not be visible.

I have an existing Verizon Wireless account. I'd like to add my girlfriend and my son to my plan. Can't seem to find info on how to add them, or what the acual cost will be per month. And the "live chat" button seems like it is perpetually unable to function. Getting frustrated.

Search for Assumption of Liability. That's what you want to do to add them if they are already Verizon Wireless customers. If they are on another carrier, then you would be adding the appropriate number of lines to your account and porting the existing numbers in.

It sounds like you are trying to add one of your devices to your Apple ID in iTunes. There are a couple of ways to do that as outlined in the following article:
Manage your associated devices in iTunes
When you turn on iTunes Match, Family Sharing, or Automatic Downloads, or when you download past purchases on your computer, iPhone, iPad, or iPod touch, that device becomes associated with your Apple ID. You can associate your Apple ID with up to 10 devices, with a maximum of 5 computers at any time. Each computer must also be authorized using the same Apple ID. You don't need to authorize your iPhone, iPad, or iPod touch.
After you associate a device with your Apple ID, you can't associate that device with another Apple ID for 90 days.

Firstly, it's a bad idea to post your email address - it's an invitation to spam - and I've asked the Hosts to remove it.
If you give the other user your ID and password he will have full access to everything in your account just as if he was you, and his contacts and calendars will sync if enabled, and he will have full access to your email. (He will of course need Lion 10.7.2 or above, or iOS5, to use the syncing facilities). He can also access the iCloud website and read, move or delete emails, and alter settings.

Keep one Apple ID for iTunes purchases (apps, music, etc.) for all family members on the iTunes Store and use different Apple IDs for each iCloud user. That worked for me.

"iCal" was the name of the calendar app/program used before Mountain Lion, now it's called Calendar.
Since "iCal" is the name of an app, I don't know what you mean by "add"ing it to icloud.
If you mean you want your calendars synced to other devices via icloud, then you need to go to the iCloud setting (on iOS look in Settings, and System Preferences on a mac) and turn on Calendar.
To add a new calendar to the set of calendars:
If on icloud.com with a browser, click the Calendars button in the upper left, click Edit, then the + button.
On a mac or device, look for the same kind of thing.
