I'm trying to attach a photo in an iMessage but can't seem to find the option...

Hi,
Open a Chat with Person
Used Buddies menu > Send File (Navigate to the chosen file or Pic) There are Keystrokes of ALT+CMD+F to do this
This will place the file or the Pic in the text entry filed in the Main Message window
Hit Enter to Send (you can add some text to explain if you like).
Using the Keystrokes when the Messages window is not Open or has not Open Chats in it will "Send" a pic or File to the Last person you were chatting with.

Photoshop is a professional image editing program. The features that you are expecting would likely be found in Photoshop Elements, a different program with a different forum.
Photoshop produces image files which you save somewhere on your computer. Then you use your mail program to attach those image files to a message. Photoshop is not an email program or CD burning program.

You cant do this easily, but you can do it for email using HTML and an image stored somewhere on the web, such as your own website.

You would do this by writing the text you want to use on a webpage on your website, publish it temporarily, then copy the text and image from the page (you dont need to see the HTML code to do this). Now use the Mail, Contact, calendars page in Settings on your iOS device to paste the block into your signature. This will add it to your signature.
I do this to put a company logo or ad at the bottom of my emails from iOS.

There is (to my knowledge) no way to do this with an existing email. You can create a new email message with a photo attachment from your 'Photos' app though. Open your photos app, select which photo you want to email, and then click the arrow in the botom left hand corner, and choose 'Mail.

There are various facebook apps, including the official one which allow photos to be uploaded : http://itunes.apple.com/us/app/facebook/id284882215?mt=8 (the app is optimised for the iPhone/iPod Touch sized screen but you can still upload photos via it)

When you're in an email you can hold down on the body of the message and you should get 3 options - paste or insert photos or video or quotle level, hit insert pictures and it will take you to your camera roll.
