How do I back up everything on my iMac onto a DVD?

There have been robberies in the neighborhood and I am afraid thieves would take my Time Capsule back up device along with the computer. I have almost 5,000 photos plus many documents that I want to burn onto a DVD. Or should I use a bunch of CD's? Or is there a better way? I would keep the DVD's in my bank's safe deposit box.

Is there a better way?  YES!
Buy an external hard disk drive and use that to back up all your Documents, Music and Photos.
Then take that drive and leave it in your office at work, or with a trusted friend... anywhere but at home. From time to time, perhaps once a month or more often, bring it home and update the backup.
Easy. Fast.  Safe.  A lot better than trying to copy everything to CD/DVD. 
Whew!  That could have been a nightmare.

    Which version of PSE? For PSE 12 you should be able to just log into revel in PSE and have them appear. If you were using an older version of PSE, there's a free mac app in the app store.

    It's not supposed to backup your apps as they should already be in your iTunes library.  If not, just redownload them for free.

    Have you ever used iTunes on your computer before to sync your iPhone?  If not, just make sure your iTunes is the most current version on your computer.  After that, connect your iPhone to the Charging Cable and then to the USB port on your computer.  Don't worry about if your iPhone is on or off, and if off don't worry about responding to the iPhone screen while you are connecting to your Computer.  If things work the way they are supposed to...
    One of two things will happen...
    Sometimes peoples Photo App will open and they can transfer their iPhone Camera Roll photos to this App on their Computer.  If this happens, just name the album on your computer and save the photos.  When that is done just close the Photo App on your Computer.
    The second thing that may have happened is that iTunes may have opened... if not click on iTunes icon for the App on your computer and open it now.  Once iTunes opens look toward the upper right of the screen and see if there is a Box that says something like "iPhone" in it.  Click on that box and see if your iTunes screen goes to the Status Screen saying what iOS Release you are on and if it is time for an Update.  Because you said your iPhone needs to be repaired, and because I don't know what is wrong with it ... Rather thna worrying about the iOS Update, look down at the bottom right of your Computer iTunes screen and see if there is a "Sync" button.  If so click on it and just wait while the Sync goes through 8 of 8 Steps and finishes.  When finished look back up at the iPhone Box and click on the Done or Eject icon.  Remove your USB cable from the computer and get ready to send your iPhone in for Repair.

    Hi. The two user tips both describe a sequence of steps that should get your library from the point where it threatens to wipe data from your device to where it is syncing normally, while recovering as much information as possible. It may still be necessary to wipe and reload the device but this should only take place once all the data that can be recovered has been recovered.
    Doing step 1 of 8 and then complaining things aren't the way you want them to be yet strikes me as premature...
    Since you appear to have all your media content, and we are discussing an iPod classic, not an iOS device, the main worries are already taken care of. What's left is ratings, playcounts, playlist membership and checked status. Since your device holds only part of your library at best you could only recover the missing data for the content that is on the device using third party tools.
    Recreating the previous checked/unchecked status of every track in your library from where you are now may not be that easy. Syncing with selected playlists has many advantages, one of which would have been that you would have a named playlist that could have been retrieved by 3rd party software if you had used this method.
    You haven't explained what caused your problem in the first place, but if you have a Previous iTunes Libraries folder holding old copies of your iTunes database (generated with each iTunes update) then it would be possible to restore the most recent of these and then update the library with any changes in your media folder.
    BTW Apple doesn't offer free support for this kind of issue with iTunes.

    Basically you need to partition your drive to GUID, then format to Mac Extended. You do both of these with Disk Utility. Then you need to clone your internal drive to the external drive.

    You merely need to download them while connected to a network (preferably wifi).
    Yes you can download full playlists, albums etc this way (note the download all option in the screenshot below)
    Another feature you may find handy is the ability to show everything in iTunes match or just that which is actually on your phone (settings > music > Show all music. Indeed I find this option so handy, i wish they'd move it from the settings to the app.

    You can find all the videos in your Library with
    File -> New Smart Album
    Photo -> is -> Movie
    Then export them:
    File -> Export - in the export dialogue set the Kind to Original
    to a folder on the desktop.
    Do you want to use this DVD in a domestic DVD player? If so, then the disk will have to be 'authored' to make it the correct form for that. If you have iDVD then that's the app you use. However, iDVD is no longer developed or distributed by Apple. You may be able to get it on an old iLIfe install disk.
