How do I back up notes so I don't loose them again

How do I back up notes "properly".
I have lost them twice now. 
Both my husband and I use the same mac to update our iphones. 
When I backup and restore my iphone it replaces my notes with his.
How do I get MY notes back.  It has very important information.

    Just to clarify a couple of points in your post.
    RAM (memory) is different from hard drive space. You have 4GB of RAM, but that has no bearing on the amount of drive space you have, of which we know that 79GB are photos.
    If those photos are in iPhoto, you should be able to move the entire iPhoto Library, from the Pictures folder, to your external hard drive. You can just drag and drop. Do not have iPhoto open while you're doing this. Once it's done, you can double-click on the moved iPhoto Library file to associate it with iPhoto, so that the app remembers where the library is for next time.
    One more thing. When you move a file to a different location, and then delete the original, you don't have a backup. You still only have one copy. So if that external drive dies, you will lose all your photos. Time Machine is a very good way to prevent this from happening. You should dedicate a different drive for Time Machine backups.

    I used to be able to color any Text, shape, or image by just selecting the particular layer and use pain bucket tool for example. Not sure what I clicked, but recently when I try to do the same; I always get the message
    "This type Layer must be rasterized before proceeding. Its text will no longer be editable. Rasterize the type? "
    I do not want to rasterize. Can I know how to revert back to the normal setup where I can do the coloring without the need for rasterize please.
    It also seems to mess around with my selection.
    For example - I have a circle shape in the middle with transparent background.
    I used to be able to go Select>All followed by Select>Inverse and it will select the circle shape.
    But now it selects the entire canvas when I select all but returns the following error when I Select>Inverse
    "Warning No Pixels were selected".

    Type:
    Double-click on the T in the type layer.
    In Type Options bar click on the color swatch which will open the Color Picker.
    Choose a color and Commit.
    The Type will remain vector and the color will have changed.
    Circle:
    If the circle was drawn with the Elliptical Marquee tool, Edit > Stroke'd with a color and then had the marching ants deselected:
    Click on the transparent area with the Magic Wand tool. If you want to include in that selection the inside of the circle unclick Contiguous in the Magic Wand Options bar.
    Then, inverse your selection to select the circular line.

    I am losing notes when I changed from an iPhone 4s to the iPhone 5, There is no dependable way to back up notes per se as notes on the apple app are incorporated into the mail program and linked to an email address that i never use and to further complicate only backs up using iCloud which I also never use and do not trust.
    Is is possible to back up notes in a straightforward manner to my computer? If not, is there a 3rd party app that allows notes and the straightforward backing up of notes? Taking notes is important to my business and I have lost many notes already using the Apple Notes app.

    I am using USB cable to sync, I have looked in Apple Mail (I'm on a Mac) and most of my notes are gone, they have never transferred over completely and only about 1/8th of my notes, only those from years ago are there.
    Why not use differing software such as Evernote that allows syncing with PC/Mac and has a host of other uses over and above the basic notes app.
    This is the way I need to go. The Apple 'notes' app has never functioned depenably and there is no way to back it up dependably, by my experience anyway. I have just purchased an App called 'Note Anytime, which is overly complicated for what I want which is just straightforward note taking capability with straightforward backup that I can use like any other files that need to be backed up, not through a mail pogram that I never use and does not work anyway.
    I'll look into Evernote and thank you for that tip.
    If your doing other stuff document creation etc you should be using Pages or something like Documents to Go.
    I am a publisher by profession and use the full Adobe CC suite including InDesign for publishing. I also use Microsoft Office for the Mac for the times I need to work with Word documents. So, I'm covered in that department. Once I am able to save Notes as text files on my computer, I may have use to import those notes into publishing or word processing software also.
    If paranoid or have sensitive data that you don't want sent via a conduit then you shouldn't be using a tablet of any discription as these are by definition Internet devices.
    No paranoya here, just looking for a dependable note taking app that doesn't use a convoluted process to make a backup and doesn't 'drop' notes or lose them mysteriously.

    Restoring from a backup is all or none. There is no option to restore select data only.
    You can use a 3rd party utility such as this one to extract select data from your iPhone's backup for viewing and access on your computer but not for transferring back to your iPhone.

    I am happy to say that I finally figured out how to get my calendar back: I dug deep into the bowels of the phone, and discovered that syncing had been changed from "all events" to "one month." I changed it back, and - presto! - my life returned.
    I am sorry to say that I didn't get any help from anyone at Apple or on this forum. I don't understand why the Appleistas feel free to change these things without warning us, and without telling us how to fix them. I like this phone, but because of the company's institutional arrogance, I strongly doubt that I will ever purchase another Apple product.

So I reckoned I would start from scratch and download whatever I could get, latest edition, as a 30-day trial, then purchase it after I had tried it out. Well that doesn't work because I still am being asked to either register with a serial number or join the CC, in spite of it being a 30-day free trial. The Continue Trial button is not available.
