How do I Change #ffffff to a solid pantone color like Rhodimine Red?

I work for a catalog in which alot of products come in photographed white or a light faded color and they want me to digitally add color. Normally this is no problem but now they want me to use only pantone colors so everything is uniform. Most items come in white, but occaisionally they come in beige or tan and this throws off my color correction is there any way to ensure I'm changing everything to the same pantone color? For example both attached files are two different cars painted with washed out colors is there anyway I can get them to be the EXACT same shade of Rhodimine Red?

so i just ran into this problem.
I don't know if something has changed in this version of illustrator.
I'm working on a logo and would like to use solid pantone colors,
but when i go into the swatches palette
there seems to be lots of different kinds of palettes but no mention of solid pantones, or trumatch
or other color systems i had become use to using previously.

How can I change the default fill and stroke colors for new shapes?

As you can see in the following screen recording, after I change the stroke and fill color, all my subsequent rectangles are created respecting these new colors. But then when I delete all the rectangles, choose the rectangle shape tool once again, and start creating new rectangles, they start getting created with another color I had used some time ago (and I don't know how did it become the default color).

When you have the shape tool selected you will see in the tool bar below - file edit etc a fill and stroke. This is where you can change the colours.
You can keep drawing your shapes like you did in the video but then select the rectangle and change the colour from this tool bar. The reason it changes will be because you changed the colours you were using (foreground / background) that display in the left side tool bar.

How to globally convert a swatch to a Pantone Color?

Is there a way to click on a swatch in my swatch window and convert it to a Pantone process color, and therefore have it update that color wherever it is used throughout my document?

ya, select all of your artwork, ALL OF YOUR ARTWORK.... the whole thing, all at one time. see all that stuff you drew? select it all. if, after doing this, you do see something that is not selected... select it too!
here's how : cmd+a OR ctrl+a OR select>select all OR push "v" to get your selection tool out then draw a big square around the whole thing.
still stuck? here's a picture
notice how everything is selected? all the layers, all the shapes, all everything.
now go to recolor artwork and you get this:
unfortunately the file i am working on is all blacks and grays but you get the picture, if i change one of the grays to orange it will look like this:
now all the instances of that gray have turned to orange

The easiest way might be to install a lightweight theme (formerly known as a persona). You can "shop" for one on the Add-ons site. The following link is for solid colors, but some of the pictorial ones might work, too.

You can hover your mouse over the little image tile to see how it would look if you installed it. Can you find one that looks good to you?

For short columns, the easiest method is to select the cell containing the formula, then grab the fill handle (small circle at the botom right of the selected cell) and drag down.
For long columns, use either Jerry's suggestion (copy/paste) or Insert > Fill > Fill Down.
Copy/Paste:
Select the cell containing the formula. Copy
Select from the cell containing teh formula to the end of the column. Paste.
Fill Down:
After entering the formula, and pressing enter...
Click on the column reference tab to select the whole column.
Command click on each cell above the one containing the formula to remove it from the selection.
When cell with the formula is the top cell in the selection, go Insert > Fill > Fill Down.
Pick whichever is easiest.

Find out from your son how he did it and roll it back. Without some plist manual editing or via other 3rd party tools, that graphic cannot be changed. Your easy path for fixing this is to simply ask your son in a non-confrontational way... and you will even learn something he knows and you do not. I know there's some tools out there that can do this, but I haven't done the legwork to dig them up, much less a trustworthy one. Chances are good he read something on how to hack that on the system and made the change. All you have to do is gain access to that same knowledge and presto, problem solved.
No, him saying "I don't know how it happened" is NOT an acceptable answer. He'd only give you that answer if he has a reason to be scared of you or any ramifications if he fesses up. Not trying to tell you how to parent, but if you can get that fear out of his mind, he'll tell you what he did and whatnot. Hey, maybe approach it from the standpoing of... "Hey, that's cool, didn't know it could be done even if it's hacked like that, it would be nice to change it back or put another picture on there, etc." That should defuse his fear... Good luck and sorry I don't have a direct answer for you aside from this suggestion. If I stumble across some docs on how to do this, I'll post it on here.

Here's my workaround for non-destructive sample-accurate audio editing in the arrange window:
Create a seperate region containing the edits you wish to make. (the smaller, the better.) Bounce this region to a new audio file. Open a new logic song. Before importing, change the tempo to 9999.0000, the meter to 4/1, and the division to 192. This results in a resolution of 31,996.8 ticks per second. Not quite 44.1, but enough to edit frequencies up to 16 kHz.
Depending on the length of the region, you may want to increase the length of the song to 536 measures, the longest at this meter. This gives you a maximum region length of just over 51 seconds. Set your Snap to ticks. Then, make you track settings, import, and snip away.
This gives you some undo and crossfades so you can audition and re-do your precise edits. When you are finished, bounce and re-import to your original song and replace the original region.
Note: On my system, I have about 5 seconds of playback before I get an error message relating to synchronizing audio and MIDI, but it's enough to audition the edit/fade.
