The only button I can see on the iCloud screen at Settings -> iCloud is "delete account".

Don't worry - Delete Account just means that it is deleting it from the phone. Trust me I've done it a bunch of times with many accounts and they are all perfectly fine

To change the iCloud ID you have to go to Settings>iCloud, tap Delete Account, provide the password for the old ID when prompted to turn off Find My iDevice, then sign back in with the ID you wish to use. If you don't know the password for your old ID, or if it isn't accepted, and your old ID is an earlier version of your current ID, go to https://appleid.apple.com, click Manage my Apple ID and sign in with your current iCloud ID. Click edit next to the primary email account, change it back to your old email address and save the change. Then edit the name of the account to change it back to your old email address. You can now use your current password to turn off Find My iDevice on your device, even though it prompts you for the password for your old account ID. Then save any photo stream photos that you wish to keep to your camera roll. When finished go to Settings>iCloud, tap Delete Account and choose Delete from My iDevice when prompted (your iCloud data will still be in iCloud). My wife's iPhone 5 would not backup, after upgrading to iOS 8.     The "genius" at the Apple store succeeded in DELETING, the only recent backup of her phone so
recovery became more critical.
I followed all the procedures for troubleshooting it, but still it would try to backup and then stop due to an error. We particularly wanted to preserve some game data/history/progress that she'd been working on for years.      This game (Dream Fish) would no longer open after the iOS 8 upgrade ... and the phone would not successfully backup, and so we had no confidence that it would restore from an older backup either.       I googled for solution and found Phoneview and iFunBox.      These apps allow you to see & access data files in the iPhone.      Phoneview was too fragile and crashed when copying a file any size.
I found "iFunBox".     iFunBox was excellent.      I used iFunBox to recover her game data.    It allows you to make a copy of data files that reside on the iPhone... and store them as a manual backup on the Mac.
And in the process I found 2 games that caused iFunBox to crash.      The 2 games in question were not important enough to try to keep, so I deleted them from the iPhone.
So then, I had a manual backup of the important iPhone data, and had eliminated two game files that apparently had a conflict with iOS 8.
My next Backup attempt was successful.        The iPhone with iOS 8 would now backup to both the Mac and to the Cloud.
Next I deleted Dream Fish from the iPhone and downloaded a fresh version from the Cloud.    The new Dream Fish with no history opened in iOS 8.
Then I used iFunBox to copy my wife's Dream Fish data history from the Mac back into the new game.
Once the transfer was complete, Dream Fish would now OPEN and all of her progress was there and working like normal.

The iTUnes sync syncs the contents of a folder you choose. ANd it handles only one folder at a time.
What I did to keep things straight, was to make a separate folder inside the 'my photos' part of my computer. Then put in that folder copies of things I wanted on my iPad. I could then add/remove from that folder as the mood struck and since everything in there was a copy I wouldn't lose any. (you would add/remove from the folder, then do a sync to allow iTunes to update that folder on your iPad to match the folder on your PC)
Another way, to get away from maintaining a folder, if you don't have a ton of photos, just e-mail them to yourself, save them from that e-mail. Keep them on the iPad as long as you like, then you can delete them as you wish. Photos that are synced onto the iPad must be synced off (as in removed from that folder then a sync performed to remove them)
E-mailing the photos to yourself gives you more flexibility in managing them on the iPad.

We had this problem after upgrading to iOS 8.       The iPhone 5 would not backup either to the cloud or to the computer.   Backup always ended with an error message.
Long story short, with the help of iFunBox ( which I used to make manual backups of some important iPhone data files ), I discovered two games that
would crash iFunBox.      They were not important games for us, so I didn't try to isolate the offending data files.     And I deleted the two games from the iPhone.
Apparently these two games conflicted with iOS 8 just as they did with iFunBox.      The next backup without those games was then successful.
I backed up to both the Mac and the cloud.

Deleting the account only deletes if from your iPod, not from iCloud. Anyone else still using the account will not be effected by this.
If you no longer wish to use iCloud, save any photos stream photos that you wish to keep on your phone to your camera roll by opening your my photo stream album, tapping Edit, tapping the photos, tapping Share, then tapping Save to Camera Roll. Then go to Settings>iCloud, tap Delete Account and choose Keep on My iPod when prompted (in order to keep a copy of your iCloud data on your iPod.)

You can still sync the photos and keep the photos that are already on the device. You have to include all of the albums or events in the pictures folder that you sync from. If you are using iPhoto, select that in the Sync Photos from drop down menu and then select all of the albums or events that you want to sync. Make sure to check Selected Albums, events, faces and automatically include (no events). Using that option will allow you to choose exactly which albums and events to sync.
You have to remember that all photos must be included in every sync so you cannot sync photos from iPhoto today and then try to sync photos from another folder tomorrow, or you will erase all of the photos that were synced from iPhoto. You need to maintain one main Photos syncing folder for the photos that you want to transfer to the iPad. You can have subfolders within that one main folder and you can selectively sync those subfolders. You just have to place all of the photos that you want to sync into one main iPad syncing photos folder.
There are WiFi transfer apps that allow you to transfer photos to the iPad without having to sync with iTunes. I use this one. This app (and others like it) will allow you to use multiple computers to transfer photos.

Yes. All of the phones that use the same ID for iCloud will be sharing the same iCloud account. Any data synced with the shared account will be merged and will appear on all devices. Also, any actions taken on synced data (such as deleting contacts or adding calendar events) will be replicated on all devices sharing the account.
To keep your data separate, everyone should use a separate iCloud account with a separate ID on their devices. You can continue to share the same ID for iTuens; it does not need to be the same as the ID you use for iCloud.

The Apple instructions state:
Edit a mailbox.
While viewing a list of messages, tap Edit. Select certain messages or tap Mark All, then:
Tap Mark to Flag, Mark as Read or Move to Junk
Tap Move to move selected messages into a mailbox
Tap Trash to move them to the trash
If you make a mistake, shake iPhone immediately to undo.
Unfortunately, the MOVE and the Trash buttons never activate ... is there a fix for this or is this an oversight?

This has been answered. The sync is one way - computer to ipad. You can e-mail them to yourself.

This is the design of the product. It will sycn with one computer. Sycning to anotehr will erase hte current content. The ipad simply mirrors the selected content of the computer to which it is synced.
