If you want to use a credit card then the card will need to registered in the country that you want to change to.

This changes the actual store. There are dozens of stores. Each store is posted in ONLY ONE LANGUAGE. Changing the country (actually, it changes the store) doesn't change the language. The language is hard-fixed for the particular country's store. You cannot change the language of the store. You can only change the store. The German Store is always in German. You can change to the U.S. store, but you can NEVER download / purchase anything from a different store than the one where you first got your Apple ID.
You could create a new Apple ID in the U.S. store, but that is only allowed WHILE YOU ARE LOCATED IN THE U.S. This is the most annoying limitation of the Apple ID and flies in the face of Apple's attempt to present a globe-trotter image for their customers.

I live in china but I'm from Canada and my iTunes is linked to Canada. Twice so far this year I have had my iTunes, App Store, and iBooks all convert to the Chinese sites. I am trying to put it back to Canada but for some reason it won't change. My region is still Canada so I'm not quite sure what is going on. Can anyone help?

Apps are permanently tied to the Apple ID used to purchase them. You will always be asked for the password associated with this ID when updating apps, regardless of whether or not you are using this ID for current purchases. The only way to stop this is to delete the old apps from your phone and iTunes and repurchase them with your current ID.
Edit: to change the ID used for future purchases on your phone, go to Settings>Store>Apple ID, tap the ID shown, sign out, sign back in using the new ID. As explained above, you will still be prompted with the old ID when updating apps purchase with the older ID.

In short, if your account has a credit card associated to it, it probably won't be possible to change your region.

App store on phone has switched to different region, how do I change it back?

Somehow when browsing the app store on my iPhone it's changed to US app store. My account is based in New Zealand and I can no longer download or update anything as it keeps telling me that I need to change the store to New Zealand but I don't know how!

Open the App Store... Scroll all the way to the bottom and Select "Apple ID: abcdef", then View my Apple ID, then log in, and make sure Country/Region is selected as appropriate and hit done.
