4.Tap "View Apple ID"
5. Enter your user name and password.
6. Tap "Country/Region."
7. Tap "Change Country/Region"
8. Select the region where you are located.
9. Tap "Done".

When on the iTunes store page in iTunes, scroll to the bottom. There, on the right is a flag by which you can change the settings.

Hi, i can't download any apps because it says i have to change stores, but when i tried changing stores it says i can't because i already have a code from an itunes gift card.

You have to use up the balance on the card before you can change stores and as far as I know, there is nothing that you can do about it on your own. I assume that you entered a card from a different country's store, and now you can't switch to another store because of that. You have to use a card in the country/store in which the card was purchased.
Contact iTunes support and see if they can help you. You can change the country in the upper left corner of the page to whatever store you need.

Some how I have searched for an APP and my Iphone has changed its defaut store to NZ now when I get updates it say Account Not in This Store and tells me I must switch back to the Australian store to run the update but in good Apple stye there is NO instruction on how to do this and after various web searches I can find no reference to switching store locations.

You can't change countries whilst you have a balance on your account. If you can't spend it then you can try contacting iTunes support and ask them if they can remove the balance : http://www.apple.com/support/itunes/contact/- click on Contact iTunes Store Support on the right-hand side of the page, then Purchases, Billing & Redemption
