First, your husband can create his own Apple ID via the web, computer, or iPad, if he hasn't already:

Next, he can sign out of the Apple services that are currently using your Apple ID on your old iPad, and sign in with his own.

In order to change your Apple ID or password for your iCloud account on your iOS device, you need to delete the account from your iOS device first, then add it back using your updated details. (Settings > iCloud, scroll down and hit "Delete Account")

You don't have to do anything with the first iPod that you don't use anymore. If you are planning on keeping it, put in a drawer in your house and forget about it.
You don't need a second account to use with the new iPod. I use one Appl e ID and iTunes library for two iPods, and two iPad. I have different content on all four devices. You can select exactly what you want to sync to each device and it can be different content on all devices.

If you simply just changed the email associated with that appleid you can just delete and Re-download the apps.
You can verify the above step by going to the App Store on device > Updates>Purchased - if you see the app there just delete it from the home screen and redownload from the purchased section
Now if you got rid of that account entirely, you will have to delete and re-purchase on your new account

It would probably be best to attach the iPod to a computer and restore it. This way you'll know it's wiped clean. Then, when you start up the iPod it will ask you for your Apple ID.

I've inherited a Macbook Pro that shipped with Lion installed. The app store is showing three updates for iPhoto, GarageBand, and iMovie. When I try to update them it request the password for the Apple ID for the person who set up the Macbook. These apps came with Lion which came with the Macbook. I could reload the OS but that would wipe out my configuration. How can I change the Apple ID to reflect me as the new owner so I can update the apps included with Lion? If you know the seller, then maybe it can be done; according to the licensing agreement, if you sell/gift a Mac which came with Lion preinstalled, you are allowed to make a one time transfer of your software license. That would involve a call to Apple (I've not had to do this, but I've read that you need to call Apple and explain that you wish to transfer the Lion license from xxxxx to xxxxxx - don't know if it involves name/address or any other info). So, if your seller is willing to do this, and Apple re-registers the MBP in your name, you shouldn't have to do anything. You may want to check into this because it also may play a role when there is an OS update - not sure that you'll be able to get that with your different Apple ID.

You can't simply change the details.
In order to change your Apple ID or password for your iCloud account on your computer, you need to sign out of the account from your computer first, then sign back in using your updated details. (System Preferences > iCloud, click the sign out button)

Change it on what way ? You can update the primary email address on an account by tapping on it in Settings > iTunes & App Store on an iOS device and signing into the account, via the Store > View Account menu option on your computer's iTunes or via http://appleid.apple.com
If you want to log out of the account so that you can log in with a different account then tap on it in Settings > iTunes & App Store if using an iOS device and sign out, or on a computer's iTunes use the Store > Sign Out menu option. Any content downloaded by the currently logged in account will remain tied to that account, so only that account will be able to redownload it and/or download updates to its apps

Create a new Apple ID for the second phone. If you are setting the phones up as new phone enter the ID you want to use on each phone.
If both phones are already signed in to one Apple ID then use the settings app to change Apple IDs on one phone.
Settings > iTunes and App Store > tap on the Apple ID > sign out > sign in with alternate Apple ID.
Note that if you have downloaded apps with the original Apple ID on the phone with the new Apple ID, those apps will still be associated with the old Apple ID and will require the old ID and password in order to update them.

Did you take a look at the new feature Apple - iOS 8 - Family Sharing ?
Apple - iCloud - Family Sharing
Up to now, songs bought from iTunes could only be played by the Apple ID that has been used to buy them.
If you set up Family Sharing, your daughter can also play your songs and use the same contact info as before.
If you don't want to do that, sync the contact info to the address book on your computer, and sync the info back, using iTunes:
Sync your iPhone, iPad and iPod with iTunes using USB
If the iPad already has her Apple ID and contact info on it, restore the phone from the latest iPad backup.

Also, if you have iCloud, you will probably also want to change the iCloud account on the phone to be yours:
