How do I change the default application to open files.

I am rather new to Mac OS (using Leopard). I am rather frustrated, that I have not been able to find a way to change the default application that opens PDF files. I looked around the System Prefernces, couldn't find it, searched the Web, nothing. And I could not find an answer in this forum either.
So here is my question. How do I change the default application for opening PDF files from Preview to Adobe Reader? I do not want to have to click "open with" every time, I want to open a PDF file.
And how do I do this for other files also? For instance, I may want to open images files with Photoshop instead of Preview.

Hey ! I was going mad with the same question - and I'm not a complete newbie - so thanks to William for answering it - I knew I'd seen that dialog somewhere, but just couldn't find it. Text edit was driving me crazy telling me that .ppt files were screwed, now I've got em to open with Powerpoint...
In answer to your last question, Craig, the dialog that appears to ask if you're sure specifically says the change will relate to all .pdf files ( or .ppt or .whatever ), so it won't stop Preview from opening other types of files.

    I have recently installed mpv to get the best video playback for my mac, but I was wondering if there was a way to get video files to automatically open with mpv when they are double clicked instead of launching them through the terminal, the way you can do with applications.

    You should only need the one "Run Shell Script" action.  You do not need any other Automator actions.
    You get to provide the /path/to/where/you/stored/mpv
    If you need to provide additional command line arguments, then add them to the command line before the "$f"
    Once you save this Automator as an Application, you can then use the Finder -> Get Info to associate your video files with your application as mentioned earlier.
    Once you make the file type association for all video files with the same .type, then when you double click on a file it will be passed by argument to your Automator app as "$@", which the 'for' loop will then put into "$f" that gets substituted on the mpv command line.
    If you select a group of videos, with the .type you have associated wth your Automator app, and then use Finder -> File -> Open, your Automator app will be inoked with each of those selected files passed via "$@".  The 'for' loop will break apart "$@" into individual files that get passed to 'mpv' via the "$f" variable.
    If you have different video .types and those different .types need different 'mpv' options, you could create a different Automator app for those .types that invoke 'mpv' with the needed options for those .types.
    If all the different video .types can all use the same 'mpv' command line, you can associate as many different .types with your one Automator app via the Finder -> Get Info -> Open with -> mpv_automator_app, then click on "Change All"

    You have to do this with every file that has a different extension. You can't change the default for every file with a different extension in a single operation.

It's still refers to TextEdit to open the document.

    Select a document of that type in the Finder, choose Get Info from the File menu, change the application under Open With, click on Change All, and confirm your action.

    You are attempting to download the picture to your computer not uploading photo to the website if I am understanding you correctly.

When I do what Apple said and go to a Pages file in finder and select "get info" then select "Pages 4.3" and "change all" it just defaults to the new one even though I'd selected the old one. Do I need to completely uninstall the new version of Pages or is there another work around because the new version of Pages comes dreadfully short of the features I need that are included in the old one?

    Actually there is a workaround.
    If you open the file in Pages 5, it can then be exported on Pages 0.9 format to another folder. I had to do this as the document was only in iCloud and couldn't be recoverd by Time Machine.

    This is real progress, a solution to the problem as posted. The command:

    You could try this:
    - right-click (tap with 2 fingers on the apple trackpad) on a file you want to open in openoffice
    - move the cursor over "open with". You should see the default app, then some suggestions, then app store, then at the end, "other...".  Select "other..."
    - find openoffice in your applications folder and select it  (if it is dimmed, change "enable: " from "recommended applications" to "all applications", then you can select "openoffice")
    - check "always open with"
    - then, click "open".  The file will open in openoffice and from now on, openoffice will be the default application to open the type of file you just opened.  You should also see the icon of all files of the same type change to the openoffice file icon.
    This is supposed to work, but that's not always the case, especially when the default app happens to be an Apple app.  If you don't want to use that Apple app, delete it (or move it elsewhere if you want a backup). That can help.

    Changing the default downloads folder is helpful. Solves part of the problem. I have PGP installed and it decrypts the emails as they come in and place them in my inbox as unencrypted so the emails themselves need to remain encrypted on the disk. I tried using alias's but couldn't get it to work.
    I would just encrypt the whole disk but I am worried that I get other problems. I have had 8 Macbook Pro laptops in about 6 years and in that time only one has lasted 12 months plus without a replacement or repair. I don't think much of apples reliability or support for that matter, so rely heavily on disk clones to make sure I can keep working. The hardware is so rubbish I now keep a spare macbook for when my main one needs repaired. In fact I am running off my cloned disk just now because my brand new MBP 17" is in for repair for the 3rd time in 5 months. If the software wasn't so good I would swap back to that other operating system.

    Right (control) click on the .acsm file > select Open With > then select Adobe Digital Editions.
    Likewise you can select all of files in a folder with Edit > Select All > then Get Info and set them all to Open with: Adobe Digital Editions or whatever.
