I have a text in Ukranian language which I urgently need to convert. How can I do this?

Do you want to convert files to or from PDF format? If you're converting from PDF to Word (or another format), make sure that the fonts are embedded in the PDF, and then use Acrobat to save the PDF in the appropriate output format. No. Like Peter and Walt, I wonder why you'd want to, considering the appearance of such manipulation, illustrated above. Is this a requirement for some specific type of document?
Regarding your second question, there's no way to do this using Pages as it comes out-of-the-box (or in the downloaded edition). But you can sort the paragraphs of a document alphabetically using WordService, freeware from Devon Technologies. The link will take you to their download page. Scroll down to the Freeware section and the download link for WordService.

It was very simple to do in the previou version of pages.

I'm not sure why people are torturing themselves with Pages 5 given the nearly universal outcry on this forum and the incredibly negative reviews elswhere, such as the App Store.
Pages 4.3 should still be in an iWorks folder within your Applications folder. Just use that.

Download a piece of software called TinkerTool - that might just solve your problem. I have used it myself to change the system fonts on my iMac. It is software and not an app.
