I am having trouble creating a group email contact list on my iPad2.

While you can create contact groups on icloud.com, if you want to send emails to an entire group on your iPad, you'll need an app to do this (like Speed Names; I'm sure there are others).

The easiest way is to get the app called group e mail. There are a couple of others as well. There is a way to do it on your computer, and sync it, but I find that personally frustrating. :). Save yourself the aggrevation, and get the app, that works pretty well.

You have to use a 3rd party app to do this. Several are available, including ABContacts and Speed Names. For texting, these don't support iMessage but you can always start a group message to a set of contacts on your phone and then save to conversation to send a future message to the same list of contacts.

Use Mail Scripts. Its Add Addresses function will collect all the addresses from all selected messages and allow you to select the ones you want to add and allow you to create groups as you go.

If you set up groups in iCloud, a contact can also belong to multiple groups. And no work around or mispurposing of a field needed. You can also filter a group without using the search function. Plus, your contacts are backed and available via another avenue if needed.

Note that many email providers place limits on how many people you can address with a single email. 100 contacts is a typical limit (for iCloud.com, Gmail.com etc.) In that case no app will let you send a single email to that many contacts at once, and you should consider an online service such as mailchimp.com

How do you create a group contact? I set up icloud, but that only shows individual names. I do not want to update to ios 8.0.2 yet as it is very buggy. Any ways on how I could send this? (This is for the mail app, not SMS)

If you would like to create a contact group, you can do so on iCloud.com or using the Contacts app on Mac OS X.
Once the group is created, it will be synced to your iPad as well.

If you are referring to photo albums no you can't create them on the iPad with the current iOS software. You could not do it on the iPad original either as stated above.
You can purchase third party apps that allow you to do so. One app that I know of is called Photo-Sort. I am sure there are others available in the app store if you care to search.

Search the app store for an app that does. there are a few.
Create a contact with multiple email addresses in the same email field (separate with semicolons). There is a limit on the number of characters the field will contain, and how many addresses this will work on don't recall exactly what that limit is, however). #1 is probably your best bet.
