How do I delet photos from my new iPad 3 and replace them with others? The current photos were loaded from my computer when I connected the new iPad 3 to it, but they are not the ones I want.

Hi Jktjs,
You can be confident that nothing will be affected on your computer. A sync is a one-way operation - from the Computer to the device. I can't tell you how many posts we get with people asking how they can sync stuff from their device up to the computer....can't be done, it's a one-way street.
Be sure that before you do the sync, you have looked at every tab on the Device profile screens, and have selected how you want those items to sync (and what content from those items you want to sync) before you click on the Sync button at the bottom (it may say Apply if you have made changes. Once all changes are complete, click on the Sync or Apply button in the bottom right-hand corner of teh screen. If it was Apply, then changes to Sync, click on it again).
But as far a photos go, since they all came from the computer, they will all still be there when you are finished with the sync.

iTunes running, your phone connected, on the Info Pane, scroll down to "Advanced". Put a check in the box labeled "Replace Info on this Phone for Contacts" on next sync. Hit the apply/sync button.

Your photos are either in iPhoto (Mac) or Photo Manager (Windows)
1. In the new Itunes you can go to View and select show sidebar.
2. When you plug in your device you should see your iPad.
3. Click on the iPad - you should see a screen like this
Select/deselect the photos you want synced to the iPad.

Of course you can delete photos from your Camera Roll:
Go into your photos app and select the Camera Roll album
Click on Select at the top right of the screen
Select the photos you want to delete
Click on the Trash can at the bottom of the screen
Just remember, if you have not imported those photos into a photo app on a computer, they will be permanently deleted. You may have them on an iCloud backup, but each backup you do has only the image of the current state of your device. So, if the 1000 photos have been backed up in the last iCloud backup you do, then you delete them, and do another iCloud backup, that backup will not have those photos. Then, say, you take another 100 new photos, and back up to iCloud. That backup will have the most recent 100 photos, but not the 1000 previously backed up.
So, your best bet is to import them to your photo app on your computer, and then select delete photos from device when asked.

You can just tap Delete Back Up, you don't need to turn off iCloud.
Deleting the backup only permanently deletes the backup from iCloud. It doesn't do anything the the data currently on your phone. You will want to create a new backup as soon as possible after doing this, however, as you won't have one until your do. You can either intiate this manually to create one immediately by connecting your phone to your charger and to wifi, then going to Settings>iCloud>Storage & Backup and tapping Back Up Now at the bottom (this will take some time to complete the first time), or you can just connect it to your charger and wifi before you go to bed and it should back up automatically (and continue to do so once daily).
You don't need to manually connect your phone to your computer to back up to wifi, but it's a good idea to create a second backup using iTunes occasionally in case your iCloud backup ever fails (I do this weekly). To do this, connect your phone to your computer, open iTunes, click on the name of your phone in iTunes, go to the Summary tab of your iTunes sync settings and click Back Up Now. (Your phone will continue to automatically back up to iCloud daily; this is just a second, manual backup, on your computer.)

When I first synced my iPod Touch with my laptop, it uploaded a lot of photos onto the iPod. I now wish to delete those but it does not seem as a straight forward option!

For photos synced to the iPod you have to unsync them:
To delete photos from your device
In iTunes, select the device icon in the Devices list on the left. Click the Photos tab in the resulting window.
Choose "Sync photos from."
On a Mac, choose iPhoto or Aperture from the pop-up menu.
On a Windows PC, choose Photoshop Album or Photoshop Elements from the pop-up menu.
Choose "Selected albums" and deselect the albums or collections you want to delete.
Click Apply.

The only way you can do that is to import them into your library first, but you may have done that already.
The easiest way to tell is to select a photo from the photostream album in iPhoto and ctrl-click on it, if it gives you the option to import it isn't in your iPhoto library, if it offers you the option to show in library it has already been imorted.
