How do I delete iCloud symbol on Movies on an iPad

I have a home server with our movies and TV shows shared on the home network to our Apple TVs. The majority of our videos show on the iPad with the iCloud symbol next to them.
Given that:
A - I have not stored our iTunes library using iCloud
B - I do not use iCloud on the iPad for other than Find My iPad
Why does the symbol show? Does that mean that Apple has knowledge of what movies/TV Shows we have?

The iCloud icon on the files means they can be downloaded again to the device or computer you're using. They do not count against your iCloud storage space.
They are iTunes purchases.

If the iCloud account you are trying to delete is old ID that was later updated to change it to your current ID, you can go to https://appleid.apple.com, click Manage my Apple ID and sign in with your current iCloud ID. Click edit next to the primary email account, change it back to your old email address and save the change. Then edit the name of the account to change it back to your old email address. You can now use your current password to turn off Find My iPhone on your device, even though it prompts you for the password for your old account ID. Then go to Settings>iCloud, tap Delete Account and choose Delete from My iDevice when prompted (your iCloud data will still be in iCloud). Next, go back to https://appleid.apple.com and change your primary email address and iCloud ID name back to the way it was. Now, if desired, you can go to Settings>iCloud and sign in with your current iCloud ID and password.

You can set up a maximum of 3 accounts with any device. After that all you can do is either re-use one of the accounts already created or set up a new one using another iOS device or Mac running OS X 10.7.4 or later, if you have one. (You can't delete iCloud accounts.)

This can be done directly on the iPad by holding your finger on the app that you'd like to delete until it wiggles. Once it's wiggling, tap the 'x' in the corner of its icon.

To remove the apple id from the device, go to Settings>icloud>delete account. NOTE: this will only remove the account from the iPad. It will not delete the account.

Who is your mail service provider?
You could delete it going through Safari and logging into your mail via whoever your service is through (Comcast, Gmail, Yahoo, etc.) or if it's via iCloud, log into that service and delete it there.

If these are videos taken with your iPad, you can only add them to iCloud by adding them to a shared stream, as discussed here: http://help.apple.com/icloud/#/mmc0cd7e99.
If these were movies purchased from the iTunes store, they are already in iCloud and can be redownloaded again in many countries for free as long as the movie is still available and the studio allows it. To be safe, import them to your iTunes library so you know you have them. To do this, connect your iPad to your computer, open iTuens and go to File>Devices>Transfer Purchases. Then you can sync them back to your iPad later if you ever need to.

You have quite muddied up the waters, I'm afraid. Assuming you now have a single GUID partition formatted Mac OS Extended, Journaled, you should try reinstalling Lion:

Repair the Hard Drive and Permissions: Upon startup select Disk Utility from the main menu. Repair the Hard Drive and Permissions as follows.
When the recovery menu appears select Disk Utility. After DU loads select your hard drive entry (mfgr.'s ID and drive size) from the the left side list. In the DU status area you will see an entry for the S.M.A.R.T. status of the hard drive. If it does not say "Verified" then the hard drive is failing or failed. (SMART status is not reported on external Firewire or USB drives.) If the drive is "Verified" then select your OS X volume from the list on the left (sub-entry below the drive entry,) click on the First Aid tab, then click on the Repair Disk button. Yes, it will now always show that you purchased it, but with it deleted from ipad, when yu click the icon to download again, it will download the latest versioon available from the app store.
You cannot delete what is in the app store. nor can you erase your previous history of purchasing the app.
