How do I delete my Apple ID from the settings/iTunes

I bought a new iPhone and am trying to delete all personal data from my old 4S. However, I can't find any way to delete my Apple ID that appears on the line in Settings/iTunes & App Store. The internet shows a dialog box to Create a New ID, but I don't get that option. No matter what I change, the ID continues to appear as soon as I enter that screen. How can I delete my ID so it doesn't go along with the phone when I give it away?

Edit the list the comes up when you go to the Window menu and select "Previous Recipients".

How can I delete hidden video files from the iPad? These files were created on my MBA and when I changed the media type to iTunesU and then copied it to my iPad via iTunes, they did not appear. I can see them using 3rd party software, but they don't have delete functionality.

Interesting note: I can see the files when I use the search function, but when I tap either file, I return to my home screen. The video does not open. I can transfer the file to my MBA, and it plays fine, but I cannot figure out a way to delete them.

You cannot.
You cannot use another countrys itunes store.
You must be physically locates inside the borders of a country to use that countrys itunes store and a credit card issued in that country with a valid billing address in that country.
The owners of the distribution rights of movies/music/etc differ by country. These distributors decide who can sell their content in that country.
Buy from another source if your countrys itunes store does not carry somehting that you want.

I just purchased an iphone 5. I would like to know how you delete only certain pictures from the photo library. You can delete from camera roll, but not photo library!! There are duplicate pics and ones that I don't even want on my phone.

Your photo library is a complete list of all photos on your phone, including the camera roll and any albums you've created.
Therefore it will always duplicate photos in your camera roll.
The images are simply links, not additional copies of the photo
