I think that maybe you misunderstood. iTunes will erase the device for you as part of the update process. You so not have to do it on your own.
This is copied from the Apple site about updating to iOS 5.

Back up key elements of your device, such as settings, Contacts, Calendars, Notes, and your Camera Roll1. iTunes will not, however, back up media content from your iOS device, such as music, apps, books, movies, and TV shows.

Try and force the iPad Recovery Mode
1. Disconnect the USB cable from the device, but leave the other end of the cable connected to your computer's USB port.
2. Turn off the device: Press and hold the Sleep/Wake button for a few seconds until the red slider appears, then slide the slider. Wait for the device to turn off.
3.While pressing and holding the Home button, reconnect the USB cable to the device. The device should turn on.
4. Continue holding the Home button until you see the "Connect to iTunes" screen. When this screen appears, release the Home button. iTunes should alert you that it has detected a device in recovery mode. Click OK, and then click Restore to restore the device.
Note: Data will be lost. You may have to repeat the above many times.

Hi there,
My iPad is blocked. I launched a game (The Simpsons / Tapped out) and it got blocked = My screen is only showing this app and I can't get back, can't close my iPad, can't do anything but launching Siri, etc.
As I said, the only thing that I can do is to activate Siri and once I ask for something - i.e. Photos - it asks me for my password and afterwards it says it can't open Photos.
I tried to connect it to iTunes but it's not working: iTunes asks to check my iPad and introduce my password, I do it by launching Siri (as said before), however then iTunes asks me again to accept access from my iPad and can't do anything! Check the screenshots below:
I looked for help in Google and it looks like none has been in a similar situation like mine... I doubt it but who knows.
So, what do I do? I don't care about what I had on my iPad. I do have my backup on and it's ok removing everything and starting from zero.
Please, I'd appreciate if anyone can help me.

If you want to erase the iPad and start all over again - go to Settings>General>Reset>Erase all content and settings. That will completely erase the iPad and Yoy can configure the device from scratch.
If you want to switch ID's on the iPad go to Settings>Store>Apple ID. Tap the ID and sign out, sign in with the other ID.
