This is not how itunes match works.
Itunes match scan your itunes library on your computer and matches with the tracks on Apples server and if they are not matched, they are uploaded to Apple servers.
Once the match process is complete, all your matched, uploaded and purchased will be available for streaming or downloading on your iphone.
If you have music on your iphone that is not on your computer, you will need an app to let you transfer music from your iphone to computer.

The only supported method to get media onto an iDevice is via iTunes. Read the User's Guide it will describe how to do this in detail.
iCloud does not put media on the device, but using iTunes Match and iCloud it is possible to have access to all media that exists on your computer, but only when the device has Internet access. It will not load media onto the device.
Use of 3rd party tools to transfer files to the device is not supported.

It has nothing to do with the nano. I suspect that yo do not have the right setting checked to sync the media you want to sync, See:

In that case yo can only use the manual method of syncing discussed in the article. If yo use the automatic method the media from the iPod will be erased \. I thin you are using the manual method but the songs are not checked to to sync.

If you want to copy the music back from your iPod then File > Devices > Transfer Purchases should copy your iTunes purchased music back from it.
