    No way to turn them off, however, you can hide cover flow in the Bookmarks Manager by dragging the small rectangle box below the cover flow scroll bar upwards.
    Top Sites icon can be removed from the Bookmarks Bar via Safari Preferences>Bookmarks.
    In Safari Preferences>General, you can dictate what occurs when you open a window or page. Change from Top Sites to something else.

    Sounds like you have Zoom on. Double tap three fingers on the screen to put it back to normal size. You can turn off Zoom altogether by going to Settings>General>Accessibility, and turn off Zoom.

    I guess I really don't understand your second comment about resolution. 
    And I guess I want to know what's causing it to do this.  I think there's something in Lion that it you tap on the mouse, it makes the view larger, but I am not conscious of tapping on the mouse.  And, even so, there ought to be a way to return to normal without having to go the system preferences each time.  Right?

    The otterbox is one of the culprits. Take the phone out of the case and see if it still happens. If so it is not the case. If the problem goes away, then you may need to make the hole slightly larger. My family has three iPhone 4's in otterboxes and none have this problem.     I don't think I've seen a way to have separate Safari screens visible at the same time.  The small thumbnails were deleted in one of the iOS updates, and replaced with a multiple "Tab" system.
    You can open an additional screen in a new "tab" by pressing and holding on a link until a new menu comes up.

    From System Preferences, Mouse, Point & Click, Secondary click.  Go to it hover over Secondary click and watch the short video sequence change it left right, left right, you will see exactly what is does. No I do not think your Mouse is defective, you simply need to take control of your Mouse finger.
