How do I get notes created on iphone to stay on my phone?

I have an iPHone 5 and was syncing through icloud - When I created a note on my phone, it would turn up in my icloud account in mail.
I recently turned off the syncing for notes via icloud cause I kept inadvertently deleting notes I wanted to keep on my phone from the icloud email account.
Now all the notes I had on my phone have disappeared and I can only find them on my icloud account online.
How do I get the notes created on my phone to stay just on the phone? and how can I get the notes that are only in iCloud back onto the phone?

On your Mac, for duplicates, switching Contacts off then back on in System Preferences > iCloud may prevent duplicates.
On the iPhone / iPad tap Settings > iCloud. Make sure Contacts and Calendars are swtiched on.
Try restarting your Mac and your iOS devices when items won't sync as they should.
To restart an iOS device: Hold the On/Off Sleep/Wake button down until the red slider appears. Slide your finger across the slider to turn off iPhone. To turn iPhone back on, press and hold the On/Off Sleep/Wake button until the Apple logo appears.

If you created as an Exchange account on the iPhone (not IMAP or POP) and you have Push on it should all work smoothly; Reading a message on either client should mark the other read (it does on mine). As James says, make sure that you are using the IMAP servers for your email. You will need to check the help pages for your email provider to get the correct settings in all your devices. POP really doesn't fit the needs of todays mutiple access, always on internet, so you are better off moving to IMAP.

When connected to your computer's iTunes you can use File > Transfer Purchases to copy over any music (and other content) that you've bought from Apple. For music that you've copied from your own CDs or bought from other download sites then is it not already on your computer and/or on a backup that you can copy onto your computer ? If not then you will need to find a third-party program to copy them off the phone.

The iphone is not a backup/storage device. It simply mirrors the selected content of the computer to which it is isynced. The sync is oen way - computer to iphone. The only exception is itunes purchases. File>Devices>Transfer Purchases
You should copy everything (files/docs/music/pics/contacts/calendars/etc) from your old computer, or your backup copy of your old computer, to your new one.
