Once you have successfully done that you can go ahead and choose Erase and Sync when you plug your iPod in.

Your music should be in your iTunes library, that is how it gets synced to the iPod. If that music is not present in the iTunes library, you will need to get a 3rd party software for the computer to get the music off the original iPod and then move it to the iTunes library to be able to sync it to the new iPod. Since the songs are in your itunes you can just create a playlist that matches whats on your nano. Then sync the 30gb to that playlist.

You can transfer the music purchased from iTunes Store to the computer but not music acquired somewhere else.
Syncing is one way street, computer to iPhone. You have to use 3rd party tool to transfer music not from iTunes Store to the computer.

Your description of the problem is a bit confusing. Do you have ONLY ONE Apple ID or do you have MORE THAN ONE?
