I keep trying to see the App CAtalogue and you are forcing me to sign in through a program I hate, Snapfish. Can you help[ me use your product without such a damned program?

First make sure you are searching the name correctly.
If the app is no longer in the App Store it is no longer available for download. This happens when Apple has found the app violates the agreement with the developer or when the developer no longer wants the app listed in the App Store.
If the app is truly no longer in the App Store your only option is to copy it from iTunes on the computer you normall sync with.

Normally they're restored to your iPad right after the upgrade.
If that didn't happen, you should find them in the App Store under Purchases. Restore them, but do that one at a time.
Or you can sync with iTunes on your computer, and they should be there.

Your profile shows you are running LIon v10.7 so you should be able to launch the App Store from your Apple menu > App Store, or from your Dock, or your Applications folder.
If you can't locate the App Store, installing the OS X Lion Update 10.7.3 (Client Combo) will reinstall the App Store for you.

Unless it is a 3rd party cord, there is no cord that just goes from the phone to the wall. However, you will need a cord that connects to the computer and the phone. Touch the app and hold your finger down until all the apps start to jiggle. You will see a circled "x" in the upper left corner. Tap it to delete an app. When done press the Home button.
You cannot delete any pre-installed iOS app.
If there is No 'X' on any apps you have Downloaded... then check in Restrictions... Settings > General > Restrictions > Deleting Apps = Off / On
If the app is in iTunes, then you delete the app in iTunes (Select the App and Press Delete on your Keyboard). If you then sync with your iDevice, the app will also be deleted from your iDevice.

Match is optional (in fact you have to pay extra for it) - so carry on as before.
iCloud is separate from iTunes and is used for syncing - it's generally recommended you use a separate Apple Id for the stores(s) and iCloud anyway - that way the family can share music & apps but sync individually.
