How do I isolate multiple emails from a document?

I have a pages document with many (300) emails in it. I'd like to somehow put all the emails in a list. Is there a simple way to do this (find and list), rather than having to cut and paste each?

You have not said how these emails are arranged.
Are they buried in other text, a list or what?
Spend a little time explaining the issue clearly and in detail.
Probably the best thing would be to export the text from Pages as a plain text file then use something like BBedit, or Nisus utilising GREP to hunt out everything that has a @ in it and extract those.
Once you have separated the wheat from the chaff then it is a simple matter using WordServices to put them in some order.
After you have completed the list then bring it back into Pages.
I always find that a bit of homework with the source material may mean you don't have to pick up the pieces after they have been well mixed into something else. Somebody somewhere probably has these in a better order that you can access.

A similar problem occurs when I want to do a mass delete of emails from a specific sender....

I did all that and nothing happened. As it happens, I did manage to deal with the problem, but in a rather convoluted and tedious manner. I went into Edit, Find, and Search messages, typed in the criteria and the messages I wanted moved came up. However, there was no option to "Select All" so I had to highlight each one and then move the lot to the specific folder....that also worked for the delete problem. That is a workable solution to my problem, but the lack of a "select all" option made it very time consuming. However, I guess it's a notice to me to remember to sort my emails more often.

How do you select multiple emails from the contacts book.

Using 10.8.4. I would like to use mail and select multiple email address' from the contacts book to send the same message to multiple persons. I thought I used to be able to select more than one at a time from my contacts book. Am I crazy or did they change the way it works from the previous version of software.
Or, could you go to the contacts book and email from there. Either way it seems like it was easy to do and now I have to select one at a time and keep going back to the contacts/address book for another name.

Once you open a new message, you should be able to just start typing the first letters of the contact's name, and Mail should give you a dropdown to select from:
So, you should not have to go back and forth between your contacts and mail....anyone in your address book should show up on the dropdown as well as anyone you have received emails from or sent emails to even if they are not in your contacts....
Is that not what is happening for you? Are you using the Mail app on the Mac?

Ctrl works, but you only get to select or deselect a mail with a click. shift selects everything between the two clicks and ctrl+A selects everything in the folder.
When doing this sort of thing, pressing delete is perhaps better that using your mouse as it is easy to mess up the carefully crafted selection with a mouse jiggle at the wrong time. (Experience talking here)

To stop all email notifications or to select those you want to have go to Your Stuff in the top right of this window. Then select Your Preferences. When that page loads you will see a tab for Email Notifications. Select that and go through the choice for how or when you want to be notified by email, or not.

In the mail list on the left, there's a little 'edit' word. Tap on that, then you should see little circles pop up by each mail. Tap on the ones to choose the mails to delete. Then tap 'trash' in the lower right of the mail list and they go away.

Hold your finger down in that mail until the little blue bubble pops up. One of the options should be to select all. Choose that and all will be hilighted. then a pop up comes up to copy, choose that, open your destination and hold your finger down to get the paste dialogue.
