Okay. Your personal iCloud account really isn't involved here. If apps purchased on another person's device are automatically downloading to your device, it's because you have Apps turned on under Automatic Downloads in Settings>iTunes & App Store. If you turn it off, the downloads will stop. If desired, also turn off Music and Books to prevent these from automatically appearing on your device when purchased by someone else.
You can then control which of these, if any, you download to your device by selectively download them from your purchased list as explained here: http://support.apple.com/kb/HT2519. As long as everyone is sharing the same Apple ID for their purchases, they will all appear on this list.
As far a music organization, you should be sure all your music is in your iTunes library on your computer. You can then create the playlists you want and sync them to your device using iTunes.

Thanx P.Only if you have an iPhone backup from the time before you deleted the app. App data and settings are part of the backup, but iTunes replaces the existing backup with a new one when you sync. Only backups used to restore the phone will not be replaced and marked with a time stamp.
If you included the iphone backup folder into your computer backup routine, you could restore the folder and use the iphone backup to restore your phone. But all data will be set back to theat point in time when the backup was taken.

I bought Hangover 2 while i was back in the UK and brought it back to Australia with me, it's a Blu-Ray, DVD and Digital copy, i went to redeem the digital copy back in Australia through Itunes but it says the Code is only redeemable in the UK and Ireland. Is there anyway to get around this?

Yes, it is possible. 1 apple ID can be associated with up to 10 devices.

If you have authorized a computer with the old apple ID, you can transfer old media purchased through the old to other devices via iTunes. This doesn't mean the media purchases through the old apple ID it transferred to the new account. Yes, you can. You can configure the Side Switch (above the volume button) either as Mute switch or Rotation lock.
Settings > General > Use Side Switch to: choose what you like the Side Switch to function as. -

Unfortunately, in your case, there isn't really a way to separate them as far as I can think.
You could try restoring from a backup, and choosing an older backup perhaps
