How do i log out off the app store as it has the wrong email and I can't do my updates as i don't know the password

Go to Settings > iTunes & App Store, tap on the Apple ID, and choose 'Sign Out'.
However, logging out of the iTunes & App Store won't change the Apple ID you need to use to update an app.  It only affects what Apple ID you're using to download a new app.
Apps always have to be updated using the Apple ID that was used to download it originally.  Go to iforgot.apple.com to reset that password.  If you cannot do so, then contact Apple Account Security, or delete the app and redownload it using an Apple ID and Password that you know.
