I had to send in my iPad in to get the volume button fixed. In the meantime, I've been given a substitute iPad (both are from the school at which I work). How do I put the apps from my original iPad onto the substitute iPad?

Sync the substitute iPad to the same computer iTunes that you used previously to sync the original iPad.

One new thing I learned from it is that Evernote which I use for keeping some text notes in sync among various devices has a voice memo capability. Those would be automatically transferred. I bought an iPod nano 7th generation and all was well until my pc died. I quickly rebacked it up onto an external hard drive and only got about an eighth of my music left. FOrtuneately, my iPod has got all of my music on there!
I'm using someone elses laptop at the moment, which only has a fraction of my music at the moment, and I wondered if it was possible if I could transfer my music from my iPod onto this new laptop, temporarily.
I figured it would be an everyday thing Apple offered to its customers, but I suppose there might be some poxy copyright laws of something silly like that.
I'm running Windows 7 at the mo.

You don't. Apps from iTunes are for iOS devices. Apps for the Mac come from the Mac app store. Click the apple >> app store.

If it's compatible with the version of iOS that you have on your first gen iPad then it should show in the Purchased tab in the App Store app on it for downloading.
If you want future purchases to automatically download on it, then you can turn on automatic downloads on your first gen iPad via Settings > Store (and similarly Settings > iTunes & App Stores on your Mini)

This topic is covered several times a day. First of all, from now on, Back up your music because relying solely on your iPod and computer is not wise. You invest money in your music, so protect it.
Best way would be backing up your library with Data DVD's and CD's or an external hard drive. Back up often.
Ok, lecture over. Try third party programs that will let you rip your iPod onto your iTunes. Try CopyPod or YamiPod, both are free.

If your iPod is set to update automatically you just need to take care when connecting back to your computer and an empty iTunes. You will get a message that your iPod is linked to a different library and asking if you want to link to this one and replace all your songs etc, press "Cancel". Pressing "Erase and Sync" will irretrievably remove all songs from your iPod. Your iPod should appear in the iTunes source list from where you can change the update setting to manual and use your iPod without the risk of accidentally erasing it. Check the "manually manage music and videos" box in Summary then press the Apply button. Don't uncheck Sync Music it will be unchecked by default when you choose the manual setting:
