To remove an app, press and hold the app until all start to shake and a black circle with an X appears on one corner of the apps. Tap the black circle of those you want to remove and they will be deleted.

What happens when you try to delete the music in your Music App?
If I am viewing the songs by "Songs" list, I can just swipe left to right on the song listing and a red Delete button appears on the right. (Note that doen't happen when viewing in Playlists.)
If viewing as Artists or Album, I can touch and hold on a particular artist or album which brings up the little "x" icon similar to deleting an app. If I don't want to delete all af that artist I can tap the Artist (or Album) to see the included song list then swipe across individual songs to delete them as above.
Edit, if I'm in a Playlist, the swipe option doesn't work, but there is an "Edit" button in the upper right. Note that still won't delete the actual music, but allows you to modify, add or remove songs from the playlist.

On your iPad, find the song you want to delete. Swipe from left to right over the song. Hit Delete.
You can also delete songs or playlists when you connect your iPad to your computer. In iTunes, select your iPad in the left column and click Music in the right column. Uncheck any music that you don't want on your iPad and click Apply or Sync.

ITunes Match cancelled, how do I remove it from iPad?
I cancelled iTunes Match by letting it expire and now when I try and add music from my Macbook Air to my iPad Air iTunes says that "iTunes Match is On" under Summary and on the iPad my only option is to "Renew iTunes Match" and it continues to display my whole Match library but of course doesn't play them. I'm so confused as to what to do...
Press on the app icon until it wobbles then tap the X in the corner of the app icon.

You need to connect to your computer's iTunes and delete them via there. Unless you are in the US you may want to copy them to your computer first (if they are not already there) as currently only US customers can re-download music purchases. You can use File > Transfer Purchases to copy them; and you can delete them via the Music section under the iPad device on the left-hand side of iTunes

Depends on where these photos came from. If they were synced from a computer, you'll need to sync them off by unchecking the folder the pictures are in from iTunes on the computer.
If they were taken by the iPad or downloaded you should have a little trashcan icon at the top of the screen you can use when viewing the image. -

You have quite muddied up the waters, I'm afraid. Assuming you now have a single GUID partition formatted Mac OS Extended, Journaled, you should try reinstalling Lion:

Boot to the Recovery HD: Restart the computer and after the chime press and hold down the COMMAND and R keys until the menu screen appears. Alternatively, restart the computer and after the chime press and hold down the OPTION key until the boot manager screen appears. Select the Recovery HD and click on the downward pointing arrow button.
Repair the Hard Drive and Permissions: Upon startup select Disk Utility from the main menu. Repair the Hard Drive and Permissions as follows.
When the recovery menu appears select Disk Utility. After DU loads select your hard drive entry (mfgr.'s ID and drive size) from the the left side list. In the DU status area you will see an entry for the S.M.A.R.T. status of the hard drive. If it does not say "Verified" then the hard drive is failing or failed. (SMART status is not reported on external Firewire or USB drives.) If the drive is "Verified" then select your OS X volume from the list on the left (sub-entry below the drive entry,) click on the First Aid tab, then click on the Repair Disk button. If DU reports any errors that have been fixed, then re-run Repair Disk until no errors are reported. If no errors are reported click on the Repair Permissions button. Wait until the operation completes, then quit DU and return to the main menu.
Reinstall Lion/Mountain Lion: Select Reinstall Lion/Mountain Lion and click on the Continue button.
Note: You will need an active Internet connection. I suggest using Ethernet if possible because it is three times faster than wireless. -

It works just the same as an iPhone. A long hold on an icon will cause them all to start wobbling, drag to move around or tap the X to remove.You can't remove any of the built-in apps so these won't get an X to tap.

If you want to use a different account on the iPad for downloading content then you can tap on the id in Settings > Stores, but any content on the iPad remains tied to the account that downloaded it, so only that account will be able to download updates to its apps. If you don't get the 'x' on any of the apps that you've downloaded (you can't delete built-in apps) then check that Settings > General > Restrictions > Deleting Apps isn't set 'off'
