Otherwise it cannot be done directly.

He gave me his 4 digit passcode to get into the iPad, I removed the passcode to unlock, and did a reset on the device. Turn it on, I get the "Hello" screen and the initial set up pages. I get to the page with  "input your Apple ID" and when I tried to enter a new ID, it wouldn't accept it because the device had already been associated with a different Apple ID. The prompt it gave was to log in online with the original Apple ID and remove the device. Well... can't do that since the employee is long gone and that's not going to happen. So what do I do here? How do I remove it to set up a new Apple ID?

    Without the ID/password, you won't be able to use it. Suggest you take it to an Apple store. They may have some advice.

    That iPad was set up be an educational institution and those restrictions were placed on the iPad by them so students were limited to what they can do with the iPad. If you purchased this iPad from a store take the unit back for a replacement. If you purchased this iPad second hand return it to that person and ask for your money back.

    Create a new Admin user, then boot into that user.
    Then delete your user.
    Then you need to uninstall or delete any software programs that did not come stander with your computer, or that you are not selling the disk with it.

    Could you explain more? WHat do you mean that you do not have "import" on iTunes? Are you trying to find an import command to add the videos to your iTunes media library? It is called Add to library and is found in the iTunes File menu.
    But you can add files to the iTunes media library by just dropping the files onto the iTunes icon.

    Reinstall OS X without erasing the drive
    Do the following:
    1. Repair the Hard Drive and Permissions
    Boot from your Snow Leopard Installer disc. After the installer loads select your language and click on the Continue button. When the menu bar appears select Disk Utility from the Utilities menu. After DU loads select your hard drive entry (mfgr.'s ID and drive size) from the the left side list.  In the DU status area you will see an entry for the S.M.A.R.T. status of the hard drive.  If it does not say "Verified" then the hard drive is failing or failed. (SMART status is not reported on external Firewire or USB drives.) If the drive is "Verified" then select your OS X volume from the list on the left (sub-entry below the drive entry,) click on the First Aid tab, then click on the Repair Disk button. If DU reports any errors that have been fixed, then re-run Repair Disk until no errors are reported. If no errors are reported click on the Repair Permissions button. Wait until the operation completes, then quit DU and return to the installer.
    If DU reports errors it cannot fix, then you will need Disk Warrior and/or Tech Tool Pro to repair the drive. If you don't have either of them or if neither of them can fix the drive, then you will need to reformat the drive and reinstall OS X.
    2. If the drive is OK then quit DU and return to the installer.  Proceed with reinstalling OS X.  Note that the Snow Leopard installer will not erase your drive or disturb your files.  After installing a fresh copy of OS X the installer will move your Home folder, third-party applications, support items, and network preferences into the newly installed system.
    If installing Leopard the process is similar in some respects.  If you wish to begin anew then after selecting the target disk click on the Options button and select the Erase and Install option then click on the OK button.  To install over an existing system do the following:

    An Archive and Install will NOT erase your hard drive, but you must have sufficient free space for a second OS X installation which could be from 3-9 GBs depending upon the version of OS X and selected installation options. The free space requirement is over and above normal free space requirements which should be at least 6-10 GBs. Read all the linked references carefully before proceeding.
    1. Be sure to use Disk Utility first to repair the disk before performing the Archive and Install.

    2. Do not proceed with an Archive and Install if DU reports errors it cannot fix. In that case use Disk Warrior and/or TechTool Pro to repair the hard drive. If neither can repair the drive, then you will have to erase the drive and reinstall from scratch.
    3. Boot from your OS X Installer disc. After the installer loads select your language and click on the Continue button. When you reach the screen to select a destination drive click once on the destination drive then click on the Option button. Select the Archive and Install option. You have an option to preserve users and network preferences. Only select this option if you are sure you have no corrupted files in your user accounts. Otherwise leave this option unchecked. Click on the OK button and continue with the OS X Installation.
    4. Upon completion of the Archive and Install you will have a Previous System Folder in the root directory. You should retain the PSF until you are sure you do not need to manually transfer any items from the PSF to your newly installed system.
    5. After moving any items you want to keep from the PSF you should delete it. You can back it up if you prefer, but you must delete it from the hard drive.
    6. You can now download a Combo Updater directly from Apple's download site to update your new system to the desired version as well as install any security or other updates. You can also do this using Software Update.

    Find a way to contact whoever you bought it from. If you can't do that, turn it over to the police. The phone is probably stolen. There is NO WAY past the activation lock without the credentials for the Apple ID that was used to lock it.

    You cannot revert back to a previous iOS version.
    Of the apps you've mentioned, here are their sizes my iPhone 5 under iOS 8.1.2 as reported under Settings/General/Usage/Manage Storage:
    Podcasts: 8.4 MB
    iBooks: 1.1 MB
    Health: 148 KB
    I'm curious where you got the values of "approx 350 Mb each"? These apps are now embedded into iOS and AFAIK, their app sizes are not reported as user-downloaded apps are.

    Deauthorize all then authorize the active computers.
    ipods/ipads/iphones are not authorized at all.  Authorization applies only to computers.

    I do not see anythere on the Configurator where you can assign a iTunes account to the device.
    How would I roll out 100 iPads to 100 users and add apps with the VPP codes and make sure iTunes knew those people could update the app later with their own iTunes account?
    I thought if you installed an app on a iPad with, for example, [email protected] itunes account then that user had to update the app with their account. What will the 100 users do to reinstall that app or update that app if I did not install it with their account.

    Any app (free or purchased) installed using Apple Configurator is tied to the AppleID used by both the iTunes and Apple Configurator apps. Subsequent updates to these apps can only be installed when the iPads are re-connected to Apple Configurator.
    You could always give out the password to the AppleID you use, but I wouldn't suggest it.
    The only other option is distribute individual http links to the app codes in the spreadsheet in an email to all users, individually, who need the app. This can be quite onerous with many codes.
    Users need to open this email on the iDevice and tap the link. Once the user logs in to the App Store with their personal AppleID and password, the app will automatically download to the device. Once installed, the apps belong to the user. Any updates to the apps through the app store will use their AppleID.
    Alternatively, users can open this email on their Mac or PC and click the link. This will add the app to their iTunes library, which can then syncs with their devices.

    Thanks all. Yes, the actual solution was quite simple. I can't believe Google can't find ANYTHING on it. And so, I made a YouTube vid showing how easy it is. Glad I didn't wipe everything and start over   And yes, all I could find were people who'd forgotten the passcode.
