How do i restore my computer using time machine to how it was a few days ago?

I installed Maverick.  It was not a horrid idea but I cannot sync my iphone and ipad mail/contacts etc except through icloud.  And that just doesn't work for me.  The solution seems to be to restore my HD to its state prior to when i installed Maverick.  But that was a few days ago.  Luckily, I do have Time Machine.  Things are backed up, but I am a little unclear how I go about restoring to a previous incarnation of the harddrive, rather than the current one.  When I got a new HD it was easy, just plugged it in and TM transferred everything.  But I don't want to transfer the current version, I want the version from a few days ago.  How do I do this?

To restore a Time Machine backup, hold Command and R keys while your MacBook Pro is starting up to start up in OS X Recovery. Then, plug the external drive with the Time Machine backups, and choose the option to restore a Time Machine backup.
It will let you choose which backup you want to restore, so select it and follow its steps. The hard drive will be erased

    Apologies for not replying back sooner - I've been away.
    Although your suggestion helped me in getting a copy of Lion that I could use, it didn't help with the restore from Time Capsule issue.  I had to download the Lion app onto my MacBook & then transfer it across but it wouldn't let me upgrade my OS for some reason, so I ended up wiping the iMac completely and restoring via my Snow Leopard install disk.  For some reason, this time, it let me have the option of using Setup Assistant to access the Time Capsule for a complete restore.
    Now, over a week later, with various bits of tweaking and reinstalling some apps that didn't seem to come across, I have my system back.

    Your choice really. Either way will work. Retaining the older backups gives you a way to restore older files. When I upgrade from 10.8 to 10.9, the backups continued without errors. Depending on what you upgraded from, in 10.8/9 you have the option to backup to 2 separate drives thus giving you some protection in case one drive fails. You can either copy the old backup to a new drive (Disk Utility/Restore seems to work best) or start a new one.

    No. TM has to look through your entire drive contents and copy them all. This will take some time.
    Once the first backup is made, then subsequent backup will be much quicker, depending on how much data has changed since the last one.

    I'm trying to prevent losing my photos. (If someone could direct me to how to really check if I've lost my photos that would be helpful too) but in the meantime this is what has happened:
    1. I "tried" to back up my computer (21.5 inch mac) with a brand new hard drive (2TB) two nights ago using Time Machine and the OS was Mavericks. (*I have never backed up using TIme Machine before so this is very new to me)

This backup "seemed" to have worked (it looked as though there were 2 of everything and I was not confident my photos were really there because I could not figure out how to navigate the Time Machine window and I would have liked to partition that hard drive but couldn't find where to do that either and that's another discussion )......, however the "encrypting" was taking forever and my computer was running SO SLOW (barely over half as of this morning) so I shut off Time Machine, quit and restarted the computer. I went to Apple Support and searched for Time Machine directions which I found, but were in video(Mac OS X: Time Machine Basics  Quicktime) format and was told I needed to install QT, really??
    3. Since QT wasn't working I checked on software update and saw that there was one for OS and now I'm running on OS Yosemite
    4. And with that I had to upgrade iPhoto
    5. and when I try to open iphoto I get this message "The photo library needs to be upgraded to work with this version of iPhoto."
    6. If I hit "upgrade" will everything be OK? I am 100% NOT confident in anything I am doing at this point.
    7. After reading up on the QT problem, I tried opening the same page, Mac OS X: Time Machine Basics in Safari and it worked fine. Regardless of what I was doing, QT would not play the same video whilst using Chrome.

    All you need to know to use TM is how to switch it on. Nothing else is adjustable.
    You'll need an external drive to store the backup. When you connect it you will be asked whether you want to use it for TM, say yes.

    You have to know where Quicken stores it (I don't use Quicken, so don't know myself).  It's probably somewhere in either the Documents folder or the Application Support folder inside the Library folder in your home folder.

    Just to clarify a couple of points in your post.
    RAM (memory) is different from hard drive space. You have 4GB of RAM, but that has no bearing on the amount of drive space you have, of which we know that 79GB are photos.
    If those photos are in iPhoto, you should be able to move the entire iPhoto Library, from the Pictures folder, to your external hard drive. You can just drag and drop. Do not have iPhoto open while you're doing this. Once it's done, you can double-click on the moved iPhoto Library file to associate it with iPhoto, so that the app remembers where the library is for next time.
    One more thing. When you move a file to a different location, and then delete the original, you don't have a backup. You still only have one copy. So if that external drive dies, you will lose all your photos. Time Machine is a very good way to prevent this from happening. You should dedicate a different drive for Time Machine backups.

    How do I restore those calendars via Time Machine? I am running OS X Lion and although I have made the terminal change so I can see my user Library folder, within Time Machine it does not show up.

    Well, I guess they're not really ical backups, per se.
    When i went to migrate MobileMe to iCloud, it said "make sure you back up your calendars first" and I almost didn't do it because I figured I have TM if I need it, but decided just to be safe...
    so I did file>export>export for each calendar.
    Then after the migration seemed to go smoothly, I deleted them.
    Then got into this snafu.
    Fortunately, was able to TM back to the desktop from right before I erased them.
    so I restored them, then imported them one by one, and so far it looks like everything is good.  Knock on wood.
    It's still frightening to me though that an accidental deletion from the cloud turns into a day of screwing around to restore things!!  It shouldn't be that easy to just permanently erase so much important data. I shouldn't have to manually export all my calendars every day if I want a backup...

    to make your user library visible, in Finder hold down the option/alt key while selecting the Go menu item. Select Library.
    If you want to make your user library permanently visible, run the below command in Applications/Terminal.
    chflags nohidden ~/Library/
    You will need to do that after any updates.

    If the folder was replaced, it was written over.
    Nothing short of forensic data recovery (probably involving taking the drive apart to scan the discs seperately) is going to recover anything (if indeed even that will).

    You don't want to do that by copying.
    Your best bet, by far, is to use Setup Assistant.  If your Mac is running Snow Leopard, see Using Setup Assistant on Snow Leopard or Leopard.
