How do I select a backup on icloud

My Iphone 5 was stolen on Sunday. I went to AT&T today and got a new Iphone 5. My problem is this. I want to restore the phone with my backup from the old phone. How do I do that.

At the present time, the only way to keep photos in iCloud indefinitely is to add them to a shared stream, as explained here: http://help.apple.com/icloud/#/mmc0cd7e99.  However, photos added to a shared stream will be a lower resolution than the original photos.  These shared streams can be shared with your friends.
If you add the photos to your normal photo stream, they will be deleted from iCloud (and all other devices/computers) when you delete them from your phone.  And although your backup includes camera roll photos, if you delete them from your phone and continue backing it up, the backup containing the deleted photos will be overwritten by one that doesn't and they will be lost.
This is likely to change in the fall with iOS 8 and its iCloud Photo Library feature (see http://www.apple.com/ios/ios8/photos/).

    If you need to select multiple items on iCloud.com then you can use the common procedure to select multiple items by either holding Command or Shift on your keyboard.
    To select multiple files or folders, hold down the Command (⌘) key, then click the items.
    To select multiple files or folders that are listed together, click the first item you want to select, hold down the Shift key, then click the last item.

    Hi All:
    So I went into my notes today to get some information there and poof, nothing, it's blank..... trying to think if I shut off it being backed up or not I went into settings and all my icloud settings were OFF.
    Well, I logged into icloud on my computer and all my notes are there.... whew....
    Now... how do I get the notes from icloud to my iphone? I have all the options turned on in settings but it will not refresh or show my notes..
    Am I missing something here?

    Open the notes app and tap Accounts, then tap iCloud; see if they appear now.  If they don't, delete the iCloud account, then sign back in.  Start by saving any photo stream photos older than 30 days to your camera roll (unless already there) or you will lose them.  Then go to Settings>iCloud, scroll down and tap Delete Account, choose Delete from My iPhone when prompted (your data will still be in iCloud).  Then sign back in to sync your iCloud data back to your phone.  See if your Notes appear now.

    Unfortunately, I don't believe notes are included in the iCloud backup since they are synced to your iCloud account.  The icloud backup includes:
    Photos and videos in the Camera Roll
    Device settings (for example: Phone Favorites, Wallpaper, and Mail, Contacts, Calendar accounts)
    App data
    Home screen and app organization
    Messages (iMessage, SMS, and MMS)
    Ringtones
    Visual Voicemails

    The backup will first restore you app data and other settings, it will then restart and restore your camera roll photos, apps and other purchased media.
    If you're concerned about losing purchased media you can always transfer them to your iTunes librarry first.  To do this, make sure your computer is authorized for all Apple IDs used to purchase your media (in iTunes: Store>Authorize This Computer).  Then connect your phone and in iTunes go to File>Devices>Transfer Purchases.  This way, should anything go missing you can always sync it back from iTunes.
    iCloud should maintain your last three backups.  You will be asked to choose which backup to restore to after choosing to restore to iCloud backup and signing into your iCloud account during the setup screens.

    iCloud is more designed for what you were able to accomplish, than for what you were not able.
    In fact, I don't know that you could get I cloud to do much more than keep copies of certain files that would sync to the iPhone, such as contacts and calendar entries. Files that are just used on the Mac, are not supported for backup. Sill, at only 5 GB capacity free of charge, the amount of space is quite miniscule. The rates for enough space for a full backup of a Mac are quite expensive, even if someday it could support it.
    As such, you are much better off using another cloud service designed to support full computer backups.

    iCloud will backup Photo Stream picture, but that only accounts for a fraction of the photos I have on my iPad. How can I truly backup everything on my iPad to the iCloud, including the thousands of photos I have?
    I am trying to completely free myself from needing a computer, and I am close to being there. But, one of the things needed is the ability to fully backup everything that is on my iPad. This is needed both for security, should something happen to my iPad, and for when I eventually upgrade to the next itteration of the iPad.
    If this is not possible, does anyone know of an app that could back everything up to a USB drive?

    The backup to the Mac will always be complete. Backups contain app data, bookmarks, contacts, notes, calendars, email settings, passwords, and all of your iPad settings. There is no "pick and choose" setting for backups to your computer. When you backup to the Mac - it is a complete backup.
    Your apps will always be accessible in iTunes - if you delete them or lose them, you can always download them again - this works for music and TV shows as well. Of course you have to use the same Apple ID and iTunes account to redownload that content.
    What I should have said is that only certain apps can sync DOCUMENTS to iCloud that will allow you to access them from the iCloud.com website. I have all of my app data selected to backup to iCloud and the only apps that show as being accessible for documents or data are Pages and the iTunes Trailers app. When you backup to iCloud - as you said - only the data from the apps that you choose will backup to iCloud so you do have the "pick and choose" option when you backup to iCloud.
    I think this information is correct now and I hope I have explained it clearly.

    When I attempted, the iPhone 6+ message asked if I wanted to remove ALL of the backups... without giving me the option of selecting the specific one I wanted to remove.
    I had performed 'backups' of my old iPhone, but, when I tried to RESTORE to the REPLACEMENT iPhone, at least one of the iCloud backups shows 'incomplete'.  There was no 'error' on the original iPhone...when it 'failed' to complete the backup.
    Now, I would like to 'clear up' the 'storage' on the iCloud, but am unable to select specific ones. I can either keep all instances or shut off iCloud Backup which would, according to the message, remove/delete ALL of the BACKUPS.
    This shouldn't be this difficult.....

    I too wondered how you remove apps from iCloud.  Judging by the quantity of questions, comments, suggestions and replies (some rather rude) there is a clear need for Apple to make their literature a lot clearer.  The page describing what iCloud backs up refers to "app data" as an item which is backed up.  To the uniniated this might mean the app program but it seems not.  The app is "bought" via iTunes or the App Store and details of your purchase (free or otherwise) is held there separately on the server.
    It would be nice however to be able to remove the reference to junk I have downloaded and decided I don't want so that it doesn't appear on the purchased apps listing!  Apple please note this.
    It must be remembered that Apple products come pitifully supported by manuals "out of the box" on the assumption that it is so easy to use the product that no explanation is needed.  They forget that most buyers of Apple products (me included) don't know (and don't want to know) how they work, so when something is not obvious they are required to plough through Lord knows how many web pages of "knowledge base" material until they find an answer.
    All I can add is that it is worth spending time reading the multiitude of discussion threads before asking the question yet again...

    Go to Settings>General>Reset and tap Erase All Content and Settings.  This will erase your device.  Then you will go through the setup screens again as you did when your device was new, and when given the option, select Restore from iCloud Backup.

    Be aware that photos should always be synced to a computer for archiving and that relying on a restore from an icloud backup may not return all (or any) of your photos.  Once on the computer, you can sync the photos to the new device...

    Are you sure you have a backup in icloud? It wont let you select one until after the restore has been started.
    Once you go though the setup process during the restore, it will prompt you for your apple id, it has to be the same one that's assciated with the icloud backup.
