    Ten years ago I bought my wife an iPod and set up an iTunes account for her using my name based on the (erroneous) information given me by a salesperson that the name on the iPod and the name on the account had to match, and since I wanted to suprise her by setting it it with some preloaded things, I used my email address and my paypal account.  Fast forward 5000 apps later... I got tired of an email from iTunes for every purchase of every app, magazine, book, renewal ad infinitum, so I told her to log in to the only installed version of iTunes we had (on her computer) and to change the darn email to something else.
    The problem that ensued raised its ugly head when many years later, she got a new iPad Air 2 and an iPhone.  Those she set up with her email address, the very same email address she changed the apple id to in iTunes several years ago.  Recently she contacted support because she was not able to log in.  First of all her password was too short (10 years old, nice and easy to remember) and secondly, the date of birth and secret question answer to the original apple id were unknown to her, since they were my credentials, not hers.
    Both accounts were irretreveably linked in the most unimaginable ways, and the new password she created for herself on her new devices worked half the the time.
    By resetting my password and changing the secret question and removing the billing info (which was my wife's credit card, not mine) I am fairly sure that the two accounts are separate.
    The point of this is that it is essential to make sure the second account has NO items, including email addresses, secret questions etc. in common and I also suggest a separate credit card.
    Here is the wierdest thing thus far - I am sending this from her computer it has the iTunes installation.  Logging in to her apple id, I see every single purchase "I" ever made prior to June of this year, and if I sign out of her apple id and in as mine there are NO purchases at all.  They all were migrated over.  I did not do this nor did I request it, but all the apps etc. now remain on her account, my account has nothing and I do not use my account at all since I have another one I had to create for my employer issued phone. 
    What one should not ever do is change the email address on an apple id without realizing that the id is also an email address and the email addressed it was changed to cannot be used to create a new separate account without a major headache.  And many calls to apple.

    You can not create a 'sub-account'.
    If the children are 13 or older, they can create their own accounts. If they are younger, the only legal option is to set up Family Sharing and create IDs for them that way.

    In order to have a separate 5GB of storage he would need to have his own iCloud account with a separate ID.  You can still share the same ID for iTunes; it does not need to be the same as the ID used for iCloud.
    In order to migrate his phone to a separate account, begin by saving any photo stream photos that he wants to keep on his phone to the camera roll by opening the photo stream album in the thumbnail view, tapping Edit, then tap all the photos he wants to save, tap Share and tap Save to Camera Roll. 
    Once this is done, go to Settings>iCloud on his phone, scroll to the bottom and tap Delete Account.  (This will only delete the account from this phone, not from iCloud.  Other devices still using the account will not be effected by this.)  When prompted about what to do with the iCloud data, choose Keep On My iPhone.  Next, set up a new iCloud account using a different Apple ID (if you don't have one, tap Get a Free Apple ID at the bottom).  Then turn iCloud data syncing for contacts, etc. back to On, and when prompted about merging with iCloud, choose Merge.  This will upload the data to his new account.
    Finally, if there is any merged data in the accounts you will then have to go to icloud.com on your computer and sign into each iCloud account separately and manually delete the data you don't want from each account.

    You would each need to use your own user account on the Mac, you can do this at system preferences > users & groups.

    It is possible to use multiple ID's on an iOS device, but when you switch ID's and download content with another ID, you associate the device with that ID for 90 days and lock yourself out of the other ID for that 90 day period.

    You really don't want to do that, operate an iPad with 2 different ID's.
    I'm presuming you have a work iPad and you want to put some non work bought apps on it. You will have issues, like half the iPad not working while the other half does.
    Probably not something you want to explain to your IT department.

    You don't need separate iCloud accounts if you want to simply sync unique content to each device using iTunes. I have three iDevices using one ID and one iTunes library and each device has it's own content on it. You need to set up the sync configuration for each device. This is what I recommend.
    First turn off auto sync in iTunes. Launch iTunes on the Mac and go to iTunes>Preferences>Devices>Prevent iPods, iPhones and iPads from automatically syncing. Click OK and then quit iTunes.
    Connect one of your devices to the Mac and launch iTunes.
    Click on the device name on the left side under the devices heading.
    Click on a tab in iTunes - Apps for instance.
    Click on the Apps that you want to sync to that device.
    Make sure that the Sync Apps heading is checked.
    Follow the same procedure for all of the other tabs in iTunes ..... Music, Photos, Movies and so on.
    After you have finished making all of your selections, click on Apply in the lower right corner of iTunes.
    When you are done, eject the first device and do the same thing with the other device. iTunes will now remember the sync configuration on each device.
    You can change that configuration any time that you like by following the steps outlined above.
    If you want to continue to auto sync, turn it back on in the iTunes preferences as described above.

    As I mentioned earlier, the main time when this becomes an issue is if you need to do something involving associating a computer with a particular AppleID.  Careful management of your collection should minimize this situation.
    iTunes Store: Associating a device or computer to your Apple ID - http://support.apple.com/kb/HT4627 -  In connection with, "When you turn on iTunes Match or Automatic Downloads, or when you download past purchases on an iOS device or computer, that device or computer becomes associated with your Apple ID." "Your Apple ID can have up to 10 devices and computers (combined) associated with it. Each computer must also be authorized using the same Apple ID. Once a device or computer is associated with your Apple ID, you cannot associate that device or computer with another Apple ID for 90 days." - Additionally instructions for "Removing an associated device or computer from an Apple ID"
    So the first account is really "yours" and you are setting her up with her own account?  It helps to know this because if both are "hers" then there isn't an issue with her having full access to both accounts.  If in 10 years she moves 2000 miles away and she is pretty much independent then you may not want her to have full access to your AppleID just so she can authorize a device.
